There are a few different theories on how this Asian fusion dish came to have the name ‘Drunken Noodles’, but one is that they’re so spicy that you’d need quite a few drinks to quench your thirst whilst eating it!

Our Drunken Noodles with Chicken is a slightly milder take on the traditional dish, but still has all of the flavours that you’d expect. We’ve used some chilli flakes and a chopped red chilli to give this recipe a little bit of a spicy kick, but you can definitely use less if you prefer your food milder. Similarly, if you love your food with some fire behind it then you can double the amount of chilli flakes and add another chopped red chilli – leave the chilli seeds in for maximum spice!

In a mixing bowl add the soy sauce, oyster sauce, fish sauce and chilli flakes, and mix well. Place the noodles in a saucepan of boiling salted water and cook for 6-8 minutes, then drain and rinse in cold water to stop them cooking.

Place a wok on a medium to high heat, spray with low calorie cooking spray and cook the chicken for 3-5 minutes until browned.

Push the chicken to one side and add the onion, chilli, pepper, garlic, carrot and broccoli, and cook until broccoli is tender.

Step 4

Push all the ingredients to one side and add the beaten egg. Stir until the egg has cooked through, then add the noodles and mix well.

Cook the noodles for 2 minutes then add the soy sauce mix and the chopped Thai basil. Cook until the sauce has thickened slightly.

Season to taste with salt and pepper.

Sprinkle with spring onions and serve.

How do you know when these Drunken Noodles with Chicken are cooked?

How do I reheat these Drunken Noodles with Chicken?

From chilled: Place in a microwave proof container with a loosely fitting lid and heat for 3 minutes then stir. Cook for a further 2 minutes or until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 4 minutes then stir. Cook for a further 3-4 minutes or until piping hot.

Ingredients

  • 420 g chicken breast cut into strips
  • 1 red pepper cut into strips
  • 200 g tenderstem broccoli cut into florets
  • 1 onion peeled and sliced
  • 6 spring onions trimmed and chopped
  • 3 cloves of garlic peeled and grated
  • 1 large carrot peeled and cut into ribbons using a potato peeler
  • 1 red chilli deseeded and chopped
  • 3 tbsp oyster sauce
  • 2 tbsp fish sauce
  • 3 tbsp soy sauce
  • 10 g Thai basil chopped
  • 2 eggs lightly beaten with a fork
  • 1/2 tsp chilli flakes
  • 200 g egg noodles
  • low calorie cooking spray
  • salt and pepper to taste

This sounds delicious, will definitely be trying it. Just one thing, hubby doesn’t eat egg, if I leave it out, will be very runny? Should I use xanthan gum to thicken?

Can you use something else in place of oyster sauce and fish sauce? Both make me sick.

    Hi Valerie, you could try vegetarian fish sauce which has a much more subtle flavour and try hoisin sauce instead of the oyster sauce. It will alter the overall flavour of this recipe from what we have tested but it will mean you can still have a try at the recipe. Hope that helps!
