This dish is one of our all time favourite takeaways! Chicken in a rich tomato sauce that’s sweetened with honey, it almost tastes like a sweet and sour but without the sour.

As the cooking time for this recipe is so short, you’ll need to remember to make sure that you’re slicing your carrots thinly enough that they cook through completely. We don’t usually bother peeling our tomatoes, but if you’d prefer it then you definitely can.

Just remove the stalk with a sharp knife and then score a large cross on the bottom. Plunge the tomatoes into a pan of boiling water for 30 – 60 seconds (depending on their size) and then remove and cool down immediately in a bowl of cold water. You should find that your skins just peel off really easily!

We love this Chinese-Style Chicken and Tomatoess served with some boiled rice as part of a Chinese Fakeaway feast – it’s much lower in calories and Points than a typical takeaway, but just as tasty and takes no time at all to make!

Add the onions and continue cooking for 4 minutes until they begin to soften.

Add the garlic and Chinese 5 spice, and cook for a minute stirring well to coat the chicken in the spice.

Stir in the sauce you made in step 1 and then add 150ml of water.

When the sauce starts to bubble, reduce the heat and allow it to simmer for 6-8 minutes, until the tomatoes and carrots are softened and the chicken is thoroughly cooked.

Ingredients

  • 500 g diced chicken breast
  • 1 onion diced
  • 1 medium carrot peeled and finely sliced
  • 3 tomatoes each cut into 6 wedges
  • 2 cloves of garlic crushed
  • 1/2 tsp Chinese 5 spice
  • 3 tbsp light soy sauce
  • 3 tbsp tomato puree
  • 2 tbsp honey
  • 1 tsp Worcestershire sauce or Henderson's Relish
  • 2 tsp rice vinegar
  • 150 ml water
  • 2 spring onions finely sliced
  • low calorie cooking spray

Hello! The carbs on this recipe seem quite high for the ingredients that are listed. I’m wondering where the 23g carbs come from? I assumed it was from the rice but this isn’t listed as an ingredient. Thanks 🙂

    Hi Ian, the main sources of carbohydrates in this recipe are the honey and the tomato puree; 23 g of carbohydrates is correct for this recipe. You’re correct about the rice as this was not included in the nutritional calculation. Do hope this helps.
