Our Diet Coke / Pepsi Max Chicken is quick, tasty and mega easy to throw together after a long day at work. The last thing you want to be doing it slaving over a hot stove for hours on end. There are a lot of variations of “Diet Coke Chicken” online, some of which are a little peculiar. Most of them use… surprise, surprise Diet Coke!
We prefer to use Pepsi Max as we think it thickens better than Diet Coke. You could even use the Pepsi Max Ginger for a more concentrated ginger taste. We’ve packed this dish with tons of veggies, but feel free to swap out any you don’t fancy; the beauty of this dish is its versatility, so chuck your leftovers in if you like.

This Pepsi Max / Diet Coke Chicken recipe is suitable if you’re gluten free as long as you swap out the following ingredients for gluten free versions;

How many calories are in this Diet Coke / Pepsi Max Chicken?
Takeaways are nearly always super high in calories, but this recipe is only 217 calories per portion! This means it falls into our Everyday Light recipe category.
This Diet Coke / Pepsi Max Chicken is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.
Step 1
Spray a frying pan with low calorie cooking spray and heat gently.
Step 2
Add the chicken, sprinkle with the 5 spice and season. Stir and cook until the chicken has started to brown.
Step 3
Remove the chicken from the pan, add a few more sprays of low calorie cooking spray and then fry off the onions, ginger, garlic and mushrooms.
Step 4
Cook until they start to soften.
Step 5
Add peppers, baby corn, tomato puree, soy sauce, Worcestershire sauce and vinegar. Stir then add the Diet Coke/Pepsi. Stir and bring to the boil.
Step 6
Stir in the half a stock cube and the stock pot and simmer, uncovered, for 10 minutes.
Step 7
When the sauce has started to thicken and go a bit syrupy, return the chicken to the pan and stir in the spring onions.
Step 8
Simmer for another 10 minutes. Check the consistency and if it’s not quite thick enough simmer for a bit longer, until the required consistency is reached.

How do you know when Diet Coke / Pepsi Max Chicken is cooked?
The chicken will be cooked throughout. You can cut a piece in half to check that the meat is white all the way through. When the dish is ready the sauce will be thick and syrupy.
This will take approximately 25 minutes on the hob.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Diet Coke / Pepsi Max Chicken in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any left overs to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Diet Coke / Pepsi Max Chicken in the fridge for approximately 3 days or so.
Can I freeze this Diet Coke / Pepsi Max Chicken?
Yes you can! This recipe can be frozen, but please remember to do the following;
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
Don’t forget to add a label with what it is, and on what date you put it in the freezer!
How do I reheat Diet Coke / Pepsi Max Chicken?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

You can cook this recipe in the slow cooker for 6-8 hours on low.
You may need to turn up the heat and simmer without the lid until the sauce reduces at the end of cooking 😊
