This mushroom side dish is definitely not just for vegetarians! It’s super versatile and it can be served with so many of our favourite dinner recipes.
Garlic and mushrooms are a classic combination, and this Cheesy Mushroom Bake brings them together in a creamy, cheesy sauce.
Rather than using actual cream and adding lots of extra calories, we’ve used some light cream cheese to make the sauce – you’d never know the difference!
Finished with a crunchy breadcrumb and parmesan topping, this dish is so moreish and delicious.

Step 1
Preheat the oven to 200ºC.

In a small jug or mixing bowl combine the cream cheese, water, thyme and garlic granules. Season with salt and pepper and leave to one side.
Step 4
Add the bread to a food processor and whizz into breadcrumbs. Add the Cheddar cheese and Parmesan cheese to the breadcrumbs and stir to combine.
Step 5
Once the mushrooms have turned lightly golden and softened, add them to an ovenproof dish. Pour over the cream cheese mixture and stir to coat the mushrooms.
Step 6
Sprinkle over the breadcrumb mixture and pop in the oven for 10 minutes. The top should be crispy and lightly golden.

Hi. Just made this and it looked nice however when I tucked into it the inside was full of water more than likely because of the mushrooms which made the breadcrumb like porridge. Any tips on how to fix this. Thanks!

Hey Matthew, you need to fry the mushrooms to release any excess moisture before adding the cheese mixture and breadcrumb top this will stop them releasing as much water in the oven. Hope that helps!
