There’s been lots of exciting things going on at Pinch of Nom HQ throughout October! Outside of spooky shenanigans (we tricked the Pinch of Nom team into trying an evil batch of our Boonanas recipe), we’ve been busy sharing sneaky details about our upcoming cookbook Pinch of Nom: Express.

Apricot Swiss Roll
One slice is all it takes to fall in love with our Apricot Swiss Roll. Fruity sponge cakes aren’t normally on offer when you’re following a slimming-friendly diet, but our nifty recipe has all the scrumptious indulgence of a bakery-bought sweet treat, for a fraction of the calories.
The key is to take your time when you’re rustling up the fluffy fatless sponge. If the flour is folded in too quickly, you could knock all of the air out of your mixture.
While the sponge bakes until it’s golden and springy to touch, you’ll get to work on the heavenly homemade filling.
We’ve given our Swiss roll an irresistible apricot cream centre, by swirling together low-fat cream cheese, granulated sweetener and freshly-pureed apricots.
Seafood Lasagne
You can rely on our hearty Seafood Lasagne to feed the whole family. Wholesome, healthy comfort food, we’ve sandwiched layers of flaky cod and juicy prawns between lasagne sheets, and added our very own slimming-friendly cheese sauce.
The beauty of using seafood for our filling, rather than more traditional beef mince, is that it’s lower in calories straight away.
Combine that with our oh-so-cheesy homemade sauce (made with lower-calorie ingredients like fat-free natural yoghurt) and you’re onto a winner any way you look at it!
Layer everything together and bake in an oven dish until the reduced-fat Cheddar cheese topping is bubbling and golden.
Roasted Beetroot and Rosemary Salad
There’s no shortage of bright colours and earthy flavours with our Roasted Beetroot and Rosemary Salad recipe. You’ll toss your beetroot chunks in a mouth-watering coating of garlic, honey and zesty orange, and oven-roast them until naturally sweet.
Coupled with a tangy layer of feta cheese and orange segments, this one’s sure to be an instant side dish favourite.
Using fresh, raw beetroot is always best for this recipe. Ready-cooked versions or pickled beetroot from a jar doesn’t retain its crunch after cooking in the same way, and you definitely don’t want to lose that moreish firm texture!
This vibrant side is a must-try with a smoky kebab, or our lip-smacking Balsamic Glazed Pork.
Maple Bacon Dijon Burgers
These Maple Bacon Dijon Burgers have been a ‘top recipe’ on our website from the day they went live. A twist on a go-to favourite from a popular fast food chain, we’ve prepared homemade lean beef patties, and topped them with bacon, cheese and a sweet-yet-spicy maple and Dijon mustard sauce.
For a more slimming-friendly alternative to a traditional burger bun, everything’s bundled together inside of a crispy, lightly-toasted ciabatta, bringing our stacked patties down to just 405 calories each.

Fruit Swirl Cheesecake Squares
We’re absolutely obsessed with these Fruit Swirl Cheesecake Squares. Starting with a simple base of crunchy reduced-fat biscuits, we’ve whipped together the silky cheesecake layer without a single full-fat ingredient in sight.
To make the fun, eye-catching pink puree topping, we’ve simmered fresh berries and orange juice until syrupy, and blitzed them together until they’re ready to drizzle.
They’re perfect all on their own with a hot cup of tea, or you can lather your serving with a few extra raspberries and a swirl of light aerosol cream, for a proper midweek pudding.
Tikka Masala Style Meatballs
A cross between curry night and Italian-style meatballs, we’ve put two family favourites together in one dish with our Tikka Masala Style Meatballs recipe.
Instead of a tomato-based sauce, the homemade lean beef meatballs are simmered in a creamy, rich Tikka Masala style sauce, until they’re piping hot and ready to serve.
To keep the calories lower without compromising on that all-important velvety texture, we’ve added coconut dairy-free milk and reduced-fat cream cheese to the pot.
Stirred in with the fragrant herbs and spices, you’re left with a mild, crowd-pleasing sauce you won’t want to miss a drop of (bring on the Naan Bread!).
Cajun-Style Bean Burgers
If you’re looking to liven up a vegetarian burger night feast, look no further than our Cajun-Style Bean Burgers. Our meat-free recipe recreates the juiciness of restaurant-bought burgers, with a blend of mashed-up mixed beans, fresh veg and Cajun spices.
As well as making our patties from scratch, we’ve also put together a punchy, lower-calorie salsa using silky smashed avocado, tomatoes, red onion and zingy lime.
We’ll take ours with a side of Sweet Potato Fries, please!

Raspberry Ripple Arctic Roll
There’s nothing we love more than taking a classic British recipe, and adding a Pinch of Nom twist! Our take on Raspberry Ripple Arctic Roll is just as fresh and fruity as traditional versions for far fewer calories, at only 141 calories per slice.
We’ve blitzed together a homemade raspberry puree, and swirled it through a creamy, lighter vanilla ice cream, to make our irresistible frozen filling.
Once your raspberry-swirled ice cream is bundled into a layer of tightly-rolled sponge cake, all that’s left to do is pop it in the freezer until it’s ready to serve at suppertime.
Prawn and Spinach Curry
Sometimes curry night can’t come fast enough! Our mildly-spiced Prawn and Spinach Curry isn’t just quick, it’s also brimming with flavour and surprisingly low in calories.
Once the veg is chopped and the sauce is simmering, your prawns will only need a few minutes in the pan before they’re piping hot and juicy.
We think it’s best to serve this one with a fluffy portion of basmati rice, because the grains soak up the aromatic, mildly-spiced sauce like a dream.
Roasted Root Vegetables with Feta and Thyme
Not sure how to make the most of autumn’s tastiest veggies? Try our super simple Roasted Root Vegetables with Feta and Thyme. These roasted root vegetables have no shortage of flavour; they’re seasoned with thyme, drizzled in honey and sprinkled with salty feta cheese.
We’ve found that it’s the ultimate low-calorie side dish for all kinds of comfort foods, from roast dinners (especially with chicken!) through to home-cooked Shepherd’s Pie.
It’s really easy to make this one vegetarian and dairy-free, by swapping the feta cheese for a suitable alternative.
