Creamy Tomato Chicken
It’s no secret by now that we love rustling up creamy chicken dishes. Ever since Creamy Garlic Chicken from our first cookbook took our Facebook group by storm, we’ve set out to create new versions that are every bit as irresistible. Enter, Creamy Tomato Chicken!
We think you’ll agree that this one is a banging addition to Pinch of Nom’s ‘creamy chicken’ hall of fame. As silky as you’d expect (without a pot of cream in sight!), we’ve made it intensely rich by combining juicy roasted tomatoes with herbs and budget-friendly store cupboard ingredients.
A trusty frying pan like this one is ideal for this recipe. It has plenty of room for your ingredients to simmer, and the non-stick coating makes washing up a breeze.

We love the easy convenience of a midweek traybake dinner. An oh-so-cheesy way to satisfy your pizza cravings, our Margherita Meatball Traybake is on the indulgent end of the scale at 464 calories per serving. An explosion of pizza-inspired flavours, it’s so simple to prepare yet impressive enough to serve for dinner guests.
If you’re not already convinced by juicy meatballs, oven-baked potatoes and veggies in a rich tomato sauce, we’re betting the melty mozzarella will convince you to have a try! Just look at it…
Make this recipe your own by playing around with different types of veg or swapping in your favourite pizza-style toppings. Just be sure to adjust any calories accordingly, if you’re counting.

Roasted Vegetable and Feta Couscous
Another delicious recipe for your traybake repertoire, our Roasted Vegetable and Feta Couscous partners crumbly feta with sweet roasted veg. We’ve used chipotle paste to guarantee that every serving comes with a moreish, smoky flavour.
We love to eat seasonally wherever possible, and it’s the perfect time of year to enjoy fresh, oven-roasted butternut squash chunks! Roasted with more veg, potatoes, feta and finished with a sprinkling of walnuts, there’s more than enough cosy flavours here to warm you right up.
The best part? You can throw it all together without a mountain of washing up to worry about afterwards. Plus, it’s ready in 40 minutes for only 274 calories per portion – that’s our idea of a midweek dream!
By loading up our bagels with juicy beef patties, crispy bacon and melted cheese, we’ve made sure all the best burger flavours are invited to the party for a fraction of the calories (only 341 per burger!).
We’ve not forgotten about the all-important burger sauce. To keep our loaded bagels on the slimming-friendly track, we’ve prepared a homemade burger sauce using a clever combination of classic condiment staples. Our sauce tastes so much better than a shop-bought version, even if we do say so ourselves!
Chicken and Prawn Creole
Nice and light with a satisfying spicy kick, our Chicken and Prawn Creole is just the ticket with a side of fluffy boiled rice. To keep the calories nice and low at 284 per serving, we’ve combined our chicken, prawns and stir-fried veggies with fiery paprika, garlic and other tasty herbs.
Once your veggies and sauce ingredients are in the pan, you can sit back and relax while the flavours simmer and mingle. The smells are unbelievable!
This dish tastes so good, we wouldn’t blame you if you made it twice in one week!
