Step 1
Season the chicken with a little sea salt and freshly ground black pepper, then set aside
Step 2
Spray a large frying pan with low calorie cooking spray and place on a medium heat
Step 3
Add the chicken to the pan and quickly seal on all sides, then remove the meat from the pan, and set aside
Step 4
Return the pan to the medium heat. Add the vinegar to the Worcestershire sauce and deglaze the pan with the mixture, scraping and stirring the browned bits from the pan – use some of the stock if you need to. When most of the liquid has evaporated spray the pan with some low calorie cooking spray. Add the onion, mushrooms and garlic and sauté for 5 minutes until they start to brown, then add the Dijon mustard and cook for a minute or two, stirring constantly
Step 5
Add the stock to the pan and simmer until the liquid has reduced by half
Step 6
Reduce the heat to low and stir in the cream cheese, making sure there are no lumps of cheese remaining
Step 7
Return the chicken to the pan, stir well and simmer for 5-10 minutes until the chicken is cooked. If the sauce looks a little thick you can add some more water until it reaches the consistency you prefer
Step 8
Sprinkle with the chopped chives and serve

Could I make this in advance for friends coming over and reheat when ready to eat?
SharonMonday 2nd January 2023
Hi Susan, yes you can make Creamy Garlic chicken in advance and reheat it. Just make sure to reheat thoroughly until piping hot throughout.

Adore this recipe, so tasty and simple! Do you think it’s possible to do in the slow cooker? Thankyou for all the work you do!
HollyWednesday 21st December 2022
Hey Hannah, thanks so much for your message we are so glad to hear you enjoyed this recipe! We don’t advise cooking this recipe in the slow cooker as the cream cheese can split if it gets too hot when cooking. Hope that helps!

Help please. The recipe sounds great but I have a severe food intolerance of cheese. I thought of replacing it with 0% fat Greek yogurt but have you any ideas of what else can I add to give the flavour of the cream cheese? Many thanks for your help.
HollyMonday 21st November 2022
Hey Bev, there are dairy free and lactose free brands available which could be swapped for the cream cheese in this recipe, hope that helps!

Yo Nommers.
Can anyone tell me what I could substitute for mushrooms. I find them abhorrent and should never be used in any recipe 😉 but it looks like it is the main bulk of the recipe.
Many thanks. S

Hi Scottyb, mushrooms are an important part of this recipe so can’t really be substituted with anything else. We have some other similar creamy chicken recipes without mushrooms that you might like to try: Creamy Fajita Chicken, Creamy Tomato Chicken, Creamy Pesto Chicken, Creamy Lemon Chicken. Enjoy!

We cook this without mushrooms, adding much more onion. Serve with boiled rice and green beans

Hi there, I love this recipe, especially with basmati rice and broccoli on the side. If I was to freeze a portion, how can I ensure there is enough sauce when I defrost and it doesn’t end up too thick in consistency? Can I add hot water when simmering on a pan to reheat?
HollyWednesday 5th October 2022
Hey Victoria, thanks so much for your message we are glad to hear you enjoyed this recipe. Once defrosted if the sauce is a little thick a splash of water should help!
