There are certain dishes that we can’t help but revisit time and again, and Spaghetti Bolognese is definitely one of them. A versatile dish that’s just as delicious reheated, we love finding new and interesting ways to enjoy batch-cook staples. That’s how our Bolognese Quesadilla began!
Inspired by the moreish crunchiness of Mexican quesadilla, we’ve used a few slimming-friendly swaps to make our bolognese-filled wraps lighter on calories without compromising on flavour. With low-calorie tortilla wraps, reduced-fat Cheddar cheese and homemade bolognese inside, they’re as satisfying and seriously cheesy as street food versions.
If you’re looking to eat a little less meat or following a vegetarian meal plan full-time, this recipe is super simple to convert. Simply swap out the beef mince for a meat-free alternative, and be sure to use a vegetable stock cube, while cooking up the bolognese filling.

How many calories are in this Bolognese Quesadilla?
There are 320 calories per portion in this Bolognese Quesadilla recipe, which means it falls into our Everyday Light recipe category. If you’re counting calories or following one of the popular diet plans like Weight Watchers, this recipe fits in perfectly!
NHS guidelines suggest men should aim for 2,500 calories per day to maintain a healthy body weight, and women require around 2000 calories. Each person has different calorie requirements depending on their goal, so you may want to adjust your daily calorie intake according to your own personal goal.
Step 1
Spray a frying pan with low-calorie cooking spray and add the onion and carrot and fry for 4 minutes. Add the mushrooms and garlic and fry for a further 4 minutes.
Step 2
Once the vegetables have begun to soften, add the beef mince and fry until browned on all sides. This should take about 2 minutes.
Step 3
Add the chopped tomatoes, tomato puree, Henderson’s relish, balsamic vinegar and stir. Crumble in the stock cube and lower the heat, simmer for 10 minutes. The bolognese should be rich and thickened.
Step 4
Split the cheese into 4. Add 1 tortilla wrap to a clean frying pan and sprinkle over a quarter of the cheese. Add half the bolognese to the wrap, spreading out to cover while leaving a 1cm gap around the edge. Set the pan on a medium heat and fry for 2 minutes; the wrap should be golden brown and cheese melting.
Step 5
Sprinkle over another quarter of cheese over the top of the bolognese and add another tortilla wrap. Gently press down and using a spatula or fish slice flip the quesadilla over, so that the cooked wrap is now on the top. Fry for a further 2 minutes. Remove from the pan and repeat with the remaining bolognese and wraps.
Step 6
Once both quesadillas are cooked, cut them in half and then into quarters. Serve with an accompaniment of your choice!

How do you know when Bolognese Quesadilla is cooked?
You should cook Bolognese Quesadilla until the bolognese filling is thick and rich. Your mince will need 2 minutes to brown on all sides, while the sauce will need at least 10 minutes of simmering time before it thickens.
To keep your family safe, the advice here in the UK is to cook food until it has reached 70°C and remained at that temperature for 2 minutes.
How long can you keep Bolognese Quesadilla in the fridge?
Once you’ve put them out, ideally you should eat them within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Bolognese Quesadilla in the fridge for approximately 3 days or so.
Can I freeze Bolognese Quesadilla?
Yes, you can! The bolognese filling from this recipe can be frozen, but please remember to do the following;
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.

From chilled: Reheat in an oven or frying pan, stirring occasionally, until piping hot. Fill a fresh tortilla wrap following steps 4, 5 and 6.
