We’ve gone for crunchy walnuts, sweet cranberries, juicy clementines, and earthy beetroot, all piled onto crisp salad leaves. A creamy stilton dressing straight from the cheeseboard finishes the whole thing off. It’s lighter way to enjoy the last of those December trimmings.

How do you know when Boxing Day Salad is cooked?

This recipe doesn’t call for any cooking! Just toss all your ingredients together, and then serve.

If you’re not using leftover turkey and cooking it from scratch, you’ll know the turkey is cooked when you pierce it and the juices run clear, with no pinkness. As per UK food safety guidelines, always cook meat until it reaches 75ºC and stays at that temperature for at least two minutes. This is to keep you and whoever it is you’re cooking for safe.

How long can you keep Boxing Day Salad in the fridge?

You can store turkey you’ve cooked in advance in the fridge until you’re ready to put the full salad together. However, thisBoxing Day Salad tastes best freshly cooked and served immediately. Once you’ve put it out, ideally you should eat it within 4 hours.

Ingredients

For the dressing:

  • 150 g fat-free Greek yoghurt
  • 40 g Stilton, crumbled
  • juice of 1 clementine
  • 1/4 tsp garlic granules
  • 1 tsp sriracha
  • salt and freshly ground black pepper
  • 1-2 tbsp water (if required)

For the salad:

  • large bag of mixed leaves
  • 300 g cooked turkey, sliced
  • 4 spring onions, trimmed and sliced
  • 2 clementines, peeled and sliced
  • 200 g cooked beetroot (not pickled), cut into 1cm dice
  • 40 g dried cranberries
  • 50 g walnuts, broken into pieces
