We love burgers and we love breakfast, so putting the two things together just makes sense! With sausage-inspired pork patties, meaty portobello mushrooms, bacon, egg and tomato loaded into a wholemeal bread roll, these Breakfast Burgers are well worth a try.
There’s no rules when it comes to this recipe – serve it for breakfast, brunch, lunch or dinner. It takes just 20 minutes to rustle up from scratch, and that’s including making your own burger patties from lean pork mince.
Don’t forget you can always switch and swap the toppings if there’s something you don’t like too. These will be just as delicious if you use sliced mushrooms instead of portobellos, or leave off the mushrooms and tomato altogether. Why not add a squeeze of ketchup for an extra 13 calories per teaspoon (or use our slimming-friendly Ketchup recipe if you prefer!)?

How many calories are in these Breakfast Burgers?

NHS guidelines suggest men should aim for 2,500 calories per day to maintain a healthy body weight, and women require around 2000 calories. Step 1
Preheat the oven to 220°C.
Step 2
Line a baking tray with foil and place on the mushrooms and bacon medallions. Spray the tops of the mushrooms with low-calorie cooking spray and season with salt and pepper. Place the tray in the middle of the oven for 10 minutes or until cooked, flipping the bacon over halfway.
Step 3
While the bacon and mushrooms are cooking, prepare the burgers. Season the mince with Worcestershire sauce, onion granules, sage, salt and pepper. With clean hands, divide the mince into 4 and shape into burger patties that are around 1cm thick.
Step 4
Spray a non-stick frying pan with low-calorie cooking spray and place over a medium heat.
Step 5
Cook the patties for 5 minutes on each side. When done they will have coloured on the outside and be cooked through. You can check by slicing the top with a knife to be sure. Place the patties on a plate under some foil, with the cooked bacon and mushrooms to keep warm.
Step 6
Spray the pan with some more low-calorie cooking spray and fry the eggs for 3 minutes over a medium heat with the lid on. When done the white will be opaque and the yolk will be slightly set on top. Cook for 1 minute longer if you like your yolks fully set. Season the eggs with salt and pepper.
Step 7
Assemble the rolls, burger patties, mushroom, bacon, egg and tomato and serve!

These burgers are hearty enough to enjoy all on their own, although you can always add some chips or any of the following side dishes:
How do you know when Breakfast Burgers are cooked?
You’ll need to cook the bacon for around 10 minutes, making sure to turn it over halfway through. The burger patties should be cooked for 5 minutes on each side, until they have coloured on the outside and are piping hot throughout, with no pinkness in the middle.
Cook the eggs until the whites have become opaque and the yolks are cooked to your liking.
Here in the UK, the standard advice is to cook food until it has reached 70°C and maintained that temperature for 2 minutes. This is to keep you and your family safe!
How long can you keep Breakfast Burgers in the fridge?
This dish will taste best when it is freshly cooked and eaten right away. We don’t recommend refrigerating leftovers, although you could prepare the burger patties earlier in the day and keep the uncooked patties in the fridge until you are ready to cook the full recipe.
Can I freeze Breakfast Burgers?
You could prepare and freeze the uncooked burger patties if you wanted to get ahead for busier days. If you plan on freezing the uncooked patties please remember to do the following:
- Place in a container or bag that is suitable for freezing.
- Add a label with the recipe name and what date you froze it (no one likes mystery meat!)

If you have frozen the uncooked burger patties, leave them to defrost in the fridge overnight and then cook from chilled following the recipe steps.
