This one’s ideal when you fancy something as tasty as a takeaway for next to no effort after a long, busy day. All of the ingredients go in one ovenproof dish, so you can pop it all in the oven at once – and then there’s hardly any washing-up to worry about afterwards.
We’ve combined reduced-fat sausages with lots of colourful chopped vegetables to keep everything nutritious, delicious and lighter on calories. The curry sauce is really easy to rustle up from scratch: you’ll only need a handful of staple ingredients and a whisk to make it happen.
Feel free to use your favourite low-fat sausages – chicken, pork or plant-based alternatives will all work a treat!

Step 1
Place the potatoes in a pan of cold, salted water. Bring to the boil and cook for 10 minutes. Drain and allow to air-dry for 5 minutes.

Preheat the oven to 200°C fan.

Spray a large ovenproof dish with low-calorie cooking spray. Add the potatoes, sausages, onions and peppers. Spray with low-calorie cooking spray and season with salt and pepper. Roast in the oven for 40 minutes, stirring halfway through.
Step 4
While the traybake is in the oven, whisk all the curry sauce ingredients together in a small bowl.
Step 5
After 40 minutes, add the broccoli florets, peas and curry sauce. Stir well so the curry sauce coats the sausages and vegetables, and return to the oven for 15-20 minutes until the sausages are browned and the sauce is bubbling.
Step 6
Sprinkle the coriander on top and serve with a dollop of fat-free Greek yoghurt (optional).
