There’s long been a tradition in my family to have curry every Saturday. It’s always the best curry ever, and always home made. 

For some reason, it wasn’t until recently that I thought to ask for the recipe – turns out, it’s totally slimming-friendly and the easiest curry to make!

I like to serve this curry with a salad and Okre. They’re a real “marmite” vegetable but I love them! I like to dress my salad with a dressing made from lightest mayo, vinegar, garlic and black pepper – really cuts through the spice of the curry.

I find that by having the salad & chickpeas, you don’t need to have quite so much rice. That means you’re cutting down on the amount of carbohydrates you eat and you’re adding some vegetables.

If you’re lucky enough to have any left overs, this Easy Chicken Curry  heats up really well and is just as good for lunch.

This curry certainly warms up a chilly weekend, and beats buying a takeaway!!

  1. Cut the meat off from either side of the chicken thigh bones and place the meat and bone into a large saucepan
  2. Add the onion, garlic and spices and mix well to coat. Add the water and stir
  3. Cook on a medium heat with a lid on, stirring occasionally for 1 hour
  4. Remove the lid after the time and let the sauce reduce and thicken for the last 30 minutes
  5. Serve with rice and your choice of garnish (suggestions above!)

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)
- Make sure it is piping hot all the way through before serving.

If making this recipe Gluten Free please make sure to check the ingredients that you’re using

- Stock cubes
- Soy sauce - substitute with Tamari.
- Worcestershire sauce - substitute with Henderson’s Relish.
- Etc.

      We’ve not tried it in the slow cooker, but I don’t see any reason why it wouldn’t work. It would probably need 5 to 6 hours

  2. Am I reading this right, simmer for 1 hour with lid on then an additional 30 mins for sauce to reduce with lid off. Or is it an hour in total and last 30 mins without lid
