These retro-style red and white ice lollies taste as FAB as they look! With half the calories of a shop-bought version, they make for a light, refreshing sweet treat any time of year.
So easy to make, you start by freezing the milky white layer, before adding a fruity layer of strawberry squash. We couldn’t miss off the chocolate topping, with hundreds and thousands sprinkled on as a finishing touch.
We’ve used xanthan gum to turn almond milk and no added sugar squash into deliciously syrupy ice lolly layers. You’ll find that xanthan gum is a widely used ingredient in lots of the ice lollies and ice creams that you might buy from the supermarket. It’s naturally gluten free and used to thicken and stabilise foods. You can make this recipe without it if you prefer.

This FABulous Lollies recipe is suitable for vegetarian diets.
It can be made vegan and dairy free as long as you use a dairy-free or vegan chocolate. To make the recipe gluten free, simply leave off the sprinkles.
As always, take extra care when cooking for people with allergies and be sure to use different utensils, cookware and preparation areas.
Do you need any special ingredients to make FABulous Lollies?
We’ve used xanthan gum to make the layers of our lollies nice and syrupy. This is widely available in most supermarkets, in the free from and baking aisles. We like to make this recipe using Ribena No Added Sugar Strawberry squash. You will also need some ice lolly moulds to make this recipe.

How many calories are in these FABulous Lollies?

Step 1
Add the ingredients for the milk layer into a watertight jar or bottle. Shake thoroughly, until the xanthan gum has dissolved and there are no lumps.
Step 2
Pour the milk layer mix into the moulds, it should reach about halfway up. Freeze for 4 hours or until set.
Step 3
Add the strawberry layer ingredients into a clean watertight jar or bottle. Shake thoroughly until the xanthan gum has dissolved and there are no lumps.
Step 4
Pour the strawberry layer mix into the moulds to the top of the moulds. Freeze for another 4 hours or until set.
Step 5
When the lollies are frozen, melt your chocolate in the microwave for around 30 seconds, checking every 10 seconds to make sure it doesn’t burn.
Step 6
Take a lolly and hold it at an angle. Carefully drizzle some chocolate onto the end and sprinkle with some hundreds and thousands. The chocolate will set fast against the cold lolly. Once it has set you can place it back in the mould for later or serve!

How do you know when FABulous Lollies are ready?
You’ll need to wait until the white layer is completely frozen before adding the red layer on top. Each layer will need to be frozen for around 4 hours, or until fully set.
