Inspired by the pub grub classic, this Hunter’s Sausages recipe is a family-friendly banger! Just like our version of Hunter’s Chicken, we’ve made the sauce from scratch using lower-calorie ingredients, keeping things irresistibly rich and smoky with a mild chilli heat. Once the bubbly layer of Cheddar cheese is melted on top, that’s it – we have to dig in!

If you’ve already tried our Hunter’s Chicken Pasta Bake or our Hunter’s Chicken Meatballs, you’ll know we never get bored of having fun with the ultimate smoky BBQ sauce! This time we’ve put a spin on things using reduced-fat pork sausages.

We’ve added them to an ovenproof dish, wrapped in bacon and covered in a thick, rich, mildly-spiced sauce that’ll have the whole family coming back for more. And we agree, it wouldn’t be complete without a melty layer of cheese on top – that’s why we’ve sprinkled over a tangy helping of reduced-fat Cheddar cheese!

Remember…the finer you grate your cheese, the further it will go. The sauce starts out quite chunky and thick, until we blitz it in a food processor part way through. You can also use a blender, if you’d prefer.

We’ve gone with reduced-fat pork sausages to keep the calories down, but there’s nothing to stop you swapping in your favourite alternative. Just be sure to adjust the calories accordingly, if you’re keeping track! 

What diets is this Hunter’s Sausages suitable for?

Hunter’s Sausages can be enjoyed on dairy-free diets, as long as you substitute the reduced-fat Cheddar cheese for a suitable alternative.

You’ll also want to swap in gluten-free sausages and Henderson’s relish, if you’re cooking for gluten-free diets.

Please, please, please take extra care when cooking for people with allergies! Be sure to use different utensils, cookware and preparation areas.

Do you need any special ingredients to make Hunter’s Sausages?

A handheld stick blender makes preparing our homemade sauce so much easier! You’ll also want to make sure you’ve got cocktail sticks to hold the bacon-wrapped sausages together while cooking.

We used Schwartz BBQ seasoning which is available in most supermarkets in the herbs and spices aisle. Other brands are available including supermarket own brands. 

Franks Hot Pepper Sauce is also available in most supermarkets, but you can use any kind of hot pepper sauce you might already have at home. Tabasco, Sriracha and Encona work just as well, or you can use a pinch of chilli powder instead.

Remove the dish from the oven and put the bacon-wrapped sausages, seam-side down, in the hot dish. Place in the oven for about 10 minutes, turning over halfway through, until lightly browned.

Meanwhile, place all the sauce ingredients in a medium bowl and stir until mixed. When the bacon-wrapped sausages are lightly browned, remove the ovenproof dish from the oven, carefully remove the cocktail sticks and discard. Place the bacon-wrapped sausages seam-side down in the ovenproof dish and pour the sauce mixture over.

Step 5

Cover the dish with a tight-fitting lid or kitchen foil and place in the oven for 40-45 minutes, until the sausages are cooked and the onion is soft. Remove the bacon-wrapped sausages from the dish and place on a plate while you blitz the sauce.

Scrape the sauce into a food processor or use a stick blender to blitz until smooth. Place the sausages back in the dish and pour the smooth sauce over. Sprinkle the cheese evenly over the top and return to the oven for about 5 minutes until melted and golden. Serve hot with an accompaniment of your choice.

Ingredients

  • 8 reduced-fat pork sausages
  • 8 smoked bacon medallions

For the sauce

  • ½ medium onion peeled and finely chopped
  • 2 garlic cloves peeled and crushed
  • 400 g tin chopped tomatoes
  • 1 tbsp tomato puree
  • juice of 1/2 lemon
  • 1 tbsp BBQ seasoning
  • ¼ tsp smoked paprika
  • 1 tbsp balsamic vinegar
  • 2 tbsp Worcestershire sauce or Henderson's relish
  • 2 tbsp white wine vinegar
  • 1 tbsp hot pepper sauce
  • 1 tsp mustard powder
  • 1 tsp white granulated sweetener

For the top

  • 80 g reduced-fat mature Cheddar cheese finely grated
