No Christmas dinner would be complete without a variety of fresh veggies, usually with a touch of indulgence because, well… it’s Christmas!
We’ve added a festive twist to the classic glazed carrots. Chantenay carrots are smaller, slightly sweeter carrots than the typical larger ones, and are complemented beautifully by the maple syrup. They’re also so simple to prepare, and roast to perfection in the oven in only 35 minutes.
A touch of tang from lemon zest and finished with festive cranberries, this delicious side is a great addition to any Christmas dinner table.
For another nutritional side with a touch of indulgence, add a dollop of colourful Creamed Cabbage and Leeks on your plate, too.

Preheat the oven to 180ºC.

Trim the carrots (no need to peel) and scatter over a baking sheet.

Spray with low calorie cooking spray and place in the oven for 25-30 minutes, until the carrots are soft.

Mix the maple syrup, lemon zest and cranberries together in a small bowl.
Step 5
Once the carrots are soft, remove from the oven and pour over the syrup. Toss the carrots around until well coated.
Step 6
Season with salt and pepper and return to the oven for 5 minutes, no longer, as the cranberries may catch and turn bitter.
Step 7
Serve!

The cranberries on the photo don’t look fresh – do you need to use dried ones in this recipe?
