These Mini Spiced Christmas Apple Pies are a really tasty alternative to mince pies and are a perfect festive dessert.
You can really use any tart apple for this recipe – including cooking apples – and it doesn’t really matter which type you choose as the flavours will still work really well.

Cut rounds out of the pastry using a cookie cutter or a mug. Push them into the muffin tray to make the pie cases.
Step 5
When the filling is ready spoon it into the pastry.
Step 6
Use the leftover pastry to make lattices or cut shapes to place on the top of the pies. If you prefer you can leave the tops naked!
Step 7
Spray any pasty on the top of the pies with low calorie cooking spray and place into the oven for 20 minutes, or until the pastry is cooked and golden.
Step 8
You can serve these hot or cold, just let them cool for 10 minutes after you take them out of the oven as they will be very hot!

Just wondering if you could add a spoonful of raisins or cranberries (trying to eat more fruit)

Re the Mini Spiced Christmas Apple Pies…..is it possible to freeze the prepared filling by itself prior to cooking the pies as I don’t have space in my small freezer to freeze the cooked pies themselves, thanks.
