At just 14 calories per wibbly-wobbly serving, these fun and colourful Rainbow Jellies are light enough to enjoy at any time of day. We’ve paired layers of fruity, sugar-free jelly with real fruit, to make sure every level you tuck your spoon into has a gorgeous, juicy bite.
You can use any combination of jelly flavours you’d like; we’ve gone for strawberry, orange and blackcurrant alongside fresh strawberries, mandarin orange segments and blueberries. You can get creative with layers made up of your favourite soft fruits and flavours, just be sure to allow each layer to set completely before adding the next one.
Almost as fun to look at as they are to eat, you can ramp up the indulgence with a squirt of reduced-fat aerosol cream or a topping of crushed biscuits. If you do mix things up a bit, just be sure to take note of any additional calories, if you’re counting.

How many calories are in these Rainbow Jellies?

Step 1
Place the strawberry jelly crystals in the heatproof jug and add 285ml (1/2 pint) of boiling water. Stir until all the jelly crystals have dissolved completely. Add 285ml (1/2 pint) cold water and stir. Leave to cool, then divide between 6 x 350ml tall glasses.
Step 2
Divide the sliced strawberries between the glasses, placing them in the liquid strawberry jelly. Place in the fridge for 2 hours until set firmly.
Step 3
Place the orange jelly crystals in the heatproof jug and add 285ml (1/2 pint) of boiling water. Stir until all the jelly crystals have dissolved completely. Add 285ml (1/2 pint) cold water and stir. Leave to cool, then gently pour over the firmly set strawberry jelly in the glasses.
Step 4
Divide the well-drained mandarin orange segments between the glasses, placing them in the liquid orange jelly. Place in the fridge for 2 hours until firmly set.
Step 5
Place the blackcurrant jelly layer in the heatproof jug and add 285ml (1/2 pint) of boiling water. Stir until all the jelly crystals have dissolved completely. Add 285ml (1/2 pint) cold water and stir. Leave to cool, then gently pour over the firmly set orange jelly in the glasses.
Step 6
Divide the blueberries between the glasses, placing them in the liquid blackcurrant jelly. Place in the fridge for 2 hours until firmly set. Serve alone or with a swirl of reduced-fat aerosol cream or biscuit, if wished.
