We love pesto and salmon so much on their own, we’re surprised this Salmon Pesto Salad didn’t happen sooner. An utterly delicious combination, we’ve not stopped at creating a zesty, garlicky marinade for the fillets, we’ve made a lower-calorie, pesto-flavoured salad dressing too!

We’ve tossed together a medley of vibrant, crunchy vegetables to make a tasty, eye-catching bed of salad for the fillets to rest on. Think leafy greens, juicy tomatoes, peppery radishes and a flourish of crunchy, satisfying pine nuts…

The great thing about salmon is it’s quite tricky to overcook, and it soaks up flavours like a dream! Even if you’re not the most confident cook in the world, you’ll have no trouble putting this fun and flavourful fish dish together.
