This Slow Cooker Beef Stew is perfect for making in batches and freezing so that you’ve always got something super hearty and warming on hand for those days when you just don’t feel like cooking.

It’s also fantastic to pop in the slow cooker in the morning so you’ll come home at the end of the day to a tasty, filling meal.

It might be packed full of vegetables, but in our opinion you can never have enough veg, so serve with your favourite vegetables or a chunk of crusty bread to soak up all of the delicious sauce!

If you are feeling a little indulgent, why not pour a small glass of red wine into the stew or add a red wine stock pot? It really enhances the flavour and makes it super special!

Add all the remaining ingredients to the slow cooker, along with the onions and beef. Stir well.

Replace the lid and cook on medium for 6 to 7 hours or on high for 4 to 5 hours.

The meat should be tender and the potato should have started to thicken the stew slightly.

Step 6

Pick out the bay leaf and serve.

You’ll need to cook this Slow Cooker Beef Stew on medium for 6 to 7 hours or on high for 4 to 5 hours.

Ingredients

  • 1 kg stewing steak all fat removed and diced
  • 1 large onion chopped
  • 1 large courgette chopped
  • 4 large potatoes chopped into chunks
  • 4 large carrots chopped
  • 2 beef stock cubes made up with 400ml boiling water
  • low calorie cooking spray
  • 1 tsp salt
  • 1 bay leaf
  • 1 tsp freshly ground black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • 1 small swede chopped
  • 1 large leek chopped
  • 1 stick celery chopped

Could I change the meat to chicken instead of beef? I just can’t stand the texture of beef………if so, would it be best to use breasts or thighs….or wouldn’t it matter?
Would I need to adjust the cooking time? Thanks.

    Hi Rachel, you could swap the beef for chicken if you prefer. You could use either diced chicken breast or thighs, although we think thighs do have a bit more flavour. We haven’t tested this recipe using chicken but would suggest reducing the cooking time a little to around 3 – 4 hours on high. Just make sure the chicken is thoroughly cooked through and shows no sign of pinkness inside.

I’m receiving my book tomorrow think all your books are brilliant how do I know if the meals are free on slimming world . Would they work just using the books? . Because I’m not having much luck with dieting every time I don’t stay on track I put more on than I lost 😞
