This soup is the perfect slimming friendly soup as it’s packed with carrots, celery, onions and tinned chopped tomatoes. All those great vegetables to help with your weight loss.

It’s ideal for a quick lunch, and the ingredients can be found in any cupboard! If you’ve been following  Weight Watchers or calorie counting for a while you’ll know you always have a cupboard full of chopped tomatoes and a fridge packed with onions, celery, potatoes and carrots.

This recipe is the Thermomix version, but it will also work in a soup maker. However, if you don’t have either of these gadgets then it works just as well in a pan on the stove, and you can find that recipe here.

  1. Add 4 sprays of Low calorie cooking spray to the thermomix bowl
  2. Add the onion and chop on Speed 6 for 30 seconds
  3. Cook for 4 minutes at 100° on Speed 1
  4. Scrape down the side of the thermomix bowl and add the remaining veg, stock cubes, chopped tomatoes and enough water to cover the ingredients
  5. Cook on speed 1 at 100° for 20 minutes
  6. When cooked puree on speed 10 for 30 seconds and add seasoning if necessary

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough

- Use a container or bag that is suitable for freezing.

- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)

- Make sure it is piping hot all the way through before serving.
