There are over 900 different varieties of onion, but for our delicious White Onion Soup, you only need one type! White onions have a sharper flavour and work extremely well blitzed in a soup.
We’ve used white onions in this recipe which can be harder to find than standard brown cooking onions, but it’s worth finding them; most large supermarkets will stock them, but you can use brown if you can’t find white onions.
We love a warming, comforting soup for lunch on a chilly day. This White Onion Soup is creamy and velvety, with a strong flavour.
It’s also suitable for freezing so why not rustle up a big batch and pop in the freezer ready to defrost on those days you don’t have time to start from scratch. Don’t forget the wholemeal roll for dipping!
