We’ve used cheaper cuts of meat to keep the price low, and the perfect mix of colourful vegetables and sweet tomatoes.
It’s perfect over fluffy rice or piled on top of a jacket spud for a leftovers lunch the following day. We like to follow with Lemon and Blueberry Tarts for some fresh citrusy flavours to complement the savoury beef.
Mexican Chilli Beef
Another slow cooked dinner that transports your tastebuds! Mexican Chilli Beef can be cooked low and slow or in an Instant Pot® for a comforting, hearty stew.
With tender, pull-apart beef, fresh vegetables and filling beans, this dish ticks all the boxes!
We’ve given this stew a little kick of heat, but feel free to add more or less to suit your particular taste.
