1 Syn Black Forest Scan Bran Cupcakes | Slimming World

As you probably know by now we miss cake! We miss cake a lot! So much so that I regularly scour every recipe book I own, and believe me I accumulated shelves full during my cheffing days! Looking for cake, cookie or dessert recipes that can be converted into Slimming World friendly recipes.

I was spending a Saturday afternoon just flicking through some old cook books from the ’90s, in fact some dated back to the 80s, and I came across some rather tasty looking individual Black Forest Gateaux.

Now, obviously these didn’t even come close to being a Slimming World friendly recipe, so I decided to put on my thinking cap and figure out how I could make it work & these are what I can up with. Black Forest Scan Bran Cupcakes!

Casting my mind back to our Rocky Road Muffins the answer was obvious…..Scan Bran!!

1 Syn Black Forest Scan Bran Cupcakes

As with the Rocky Road Muffins, this recipe uses 5 Scan Bran crisp breads which counts as 1 HEB.

What is Scan Bran?

Scan Bran is akin to plasterboard and available to buy at group or even at Holland & Barrett. It’s kind of like a Ryvita, only not as tasty and I can’t imagine eating them on their own. You can however make fantastic cakes with it!

Each cake is worth 1 syn, so you could split the muffins over a couple of days and adjust your HEB accordingly, or just syn the Scan Bran (they are 5.5 syns for 5 crispbreads).

If you choose to syn the Scan Bran rather than use your HEB the Black Forest Scan Bran Cupcakes will work out at 2 syns each, which I think is still pretty good for a cake.

What is Sukrin?

We use Sukrin Gold which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. You can grab Sukrin Gold over onAmazon UK.

Sukrin Gold doesn’t have that strange after taste that a lot of artificial sweeteners do! It also shares the exact same sweetness and weight to sugar – which makes it really easy to substitute in recipes like these 1 Syn Black Forest Scan Bran Cupcakes.

We use also Sukrin Icing which is an all-natural granulated stevia sweetener alternative to icing sugar with zero calories. You can grab Sukrin Icing over on Amazon UK too.

 

 

If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

Synning the sweetener

As you will probably know Slimming World have brought out some recommendations regarding the syn value of granulated sweeteners last year.

Where there is 1 tbsp or more being used per serving they recommend members count 0.5 Syn per tbsp. If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.

The recipe for this 1 Syn Black Forest Scan Bran Cupcakes uses 10 tablespoons in total  and is divided into 7 portions so, if you choose to syn the sweetener, it is recommended you add 5  syns on to the whole recipe, making it just over 1.5 syns per portion if using the Scan Bran as HEB.

INGREDIENTS

INSTRUCTIONS
  1. Soak the Scan Bran in boiling water
  2. Pre-heat the oven to 180°C
  3. When the Scan Bran has softened, drain it well and mash it up with a fork
  4. Beat the eggs with the Sukrin Gold until it has dissolved, then add the cocoa powder, chocolate extract and drained Scan Bran. Mix it well to combine all the ingredients
  5. Divide the mix between 7 muffin cases and bake for 20 - 30 minutes until they are firm. They should be spongey when you press down lightly and spring back
  6. Let the cakes cool, then mix 5 tbsp Sukrin Icing with 4 tsp of Choc Shot and 3 -4 tsp of tepid water. Stir until smooth and glossy
  7. Spread the icing over the top of each cake and put them in the fridge to set for 10 minutes or so
  8. While the icing is setting on the cakes mix the Quark, with the remaining Sukrin Icing and the vanilla extract. Mix until smooth then put it in a piping bag with a star nozzle
  9. Pipe some of the Quark on the top of each cake then top with a cherry

    1. I just checked on the Sukrin web-site and they list my local Sainsbury’s as a stockist. Search on their site for your postcode and it will tell you.

      You can use any sweetener, but Sukrin doesn’t have any nasty after taste, which is why we like to use it in all our baking.

  1. Oh my god, I had intended to have a couple a day (i got 8 out of my mix) and I’ve just scoffed them all. I feel sick and weird!! They are so yummy, but I do NOT recommend eating them all in one sitting!

      It’s explained in the write up above the recipe that if you choose to syn the Scan Bran rather than use it as your HEB then they will work out at 2 syns per cake. If the Scan Bran is used as an HEB then they are 1 syn

    What does it mean when it says use ‘the rest’ of the icing sugar? There wouldn’t be any left once you’ve made the choc icing.
    Also, if I wanted to add some cherry extract should I add it to the ‘batter’ mix?

    In step 7 it says use the 6tbsp of surkin icing sugar then in step 8 it says ‘with the extra icing sugar’ I might just be being thick but obviously I don’t want to use more icing sugar than I should x

      Looks like there’s a typo in step 7. It should read 5 tbsp, then use the remaining one in step 8. It has now been corrected
