As you probably know by now we miss cake! We miss cake a lot! So much so that I regularly scour every recipe book I own, and believe me I accumulated shelves full during my cheffing days! Looking for cake, cookie or dessert recipes that can be converted into Slimming World friendly recipes.
I was spending a Saturday afternoon just flicking through some old cook books from the ’90s, in fact some dated back to the 80s, and I came across some rather tasty looking individual Black Forest Gateaux.

Now, obviously these didn’t even come close to being a Slimming World friendly recipe, so I decided to put on my thinking cap and figure out how I could make it work & these are what I can up with. Black Forest Scan Bran Cupcakes!
Casting my mind back to our Rocky Road Muffins the answer was obvious…..Scan Bran!!
As with the Rocky Road Muffins, this recipe uses 5 Scan Bran crisp breads which counts as 1 HEB.
What is Scan Bran?
Scan Bran is akin to plasterboard and available to buy at group or even at Holland & Barrett. It’s kind of like a Ryvita, only not as tasty and I can’t imagine eating them on their own. You can however make fantastic cakes with it!
Each cake is worth 1 syn, so you could split the muffins over a couple of days and adjust your HEB accordingly, or just syn the Scan Bran (they are 5.5 syns for 5 crispbreads).
If you choose to syn the Scan Bran rather than use your HEB the Black Forest Scan Bran Cupcakes will work out at 2 syns each, which I think is still pretty good for a cake.
What is Sukrin?
Sukrin Gold doesn’t have that strange after taste that a lot of artificial sweeteners do! It also shares the exact same sweetness and weight to sugar – which makes it really easy to substitute in recipes like these 1 Syn Black Forest Scan Bran Cupcakes.
If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.
That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.
Synning the sweetener
As you will probably know Slimming World have brought out some recommendations regarding the syn value of granulated sweeteners last year.
Where there is 1 tbsp or more being used per serving they recommend members count 0.5 Syn per tbsp. If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.
The recipe for this 1 Syn Black Forest Scan Bran Cupcakes uses 10 tablespoons in total and is divided into 7 portions so, if you choose to syn the sweetener, it is recommended you add 5 syns on to the whole recipe, making it just over 1.5 syns per portion if using the Scan Bran as HEB.
