Preheat the oven to 180°C.
Step 2
Combine the cauliflower, tomatoes and garlic in a dish that is suitable for the oven.

Mix the lemon zest and juice together and pour it over the vegetables.

Spray the vegetables with low calorie cooking spray so they are well coated.
Step 5
Add a sprig of fresh rosemary.
Step 6
Add some freshly ground black pepper and sprinkle with some sea salt.
Step 7
Roast in the preheated oven for about an hour making sure to stir occasionally so that everything cooks evenly.
Step 8
Stab the cauliflower stems with a fork to check they are cooked enough for you.
Step 9
Garnish with crumbled up Greek style salad cheese and serve.

How do you know when this Spiced Roasted Cauliflower is cooked?
Roast in the preheated oven for about an hour making sure to stir occasionally so that everything cooks evenly. Then stab the cauliflower with a fork a few times to check it is cooked enough for you – you can eat the cauliflower with a bit of bite to it or cook it a bit longer for a softer texture.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
