How to Make Rustic Potato Wedges

Making this dish is super easy, here’s a summary; 

  • Cut each potato into 4-6 wedges depending on size. The wedges should be quite chunky.
  • Add the wedges to a pan of salted water and bring to the boil.
  • Cook for 10 minutes, then drain the water, return them to the pan and shake to rough up the wedges slightly.
  • Spread the wedges evenly, skin side down, on a baking tray and spray with low calorie cooking spray. Sprinkle with a generous amount of coarse sea salt, paprika and a pinch of mixed herbs
  • Cook at 200°C for 30 minutes, or until the wedges are brown and crispy

We used regular Coarse Sea Salt, but there are some really nice flavoured salts you can try instead.

Can you cook Rustic Potato Wedges another way?

You can cook these wedges in a pan on the stove or in the microwave before putting them in the oven. The recipe card at the bottom of this post has instructions for both methods.

You could also cook them in an airfryer instead of the oven if you have one! Just remember the airfryer is usually a little quicker, so check them after 20 minutes.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe. 

How long can you keep Rustic Potato Wedges in the fridge?

If you allow any left overs to cool, make sure to refrigerate in a container with a lid and chill.  You can keep leftovers in the fridge for approximately 3 days or so. 

Can I freeze Rustic Potato Wedges?

If you freeze the wedges we advise doing it before they have been cooked in the oven. 

Please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

How do I reheat Rustic Potato Wedges?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot. Or you can place them on an oven tray with foil loosely placed on top. Place in a preheated oven (200°C) for around 10 minutes, until piping hot.

From frozen (part cooked): Defrost and then cook at 200°C for 30 minutes, or until the wedges are brown and crispy.

INSTRUCTIONS

  1. Cut each potato into 4-6 wedges depending on size. The wedges should be quite chunky
  2. Place the potato wedges in a microwavable bowl, cover with cling film them microwave on full power for 5 or 6 minutes until they start to soften
  3. Spread the wedges evenly, skin side down, on a baking tray and spray with low calorie cooking spray. Sprinkle with a generous amount of coarse sea salt, paprika and a pinch of mixed herbs
  4. Cook at 200°C for 30 minutes, or until the wedges are brown and crispy

    The microwave instructions are exactly the same as the oven ones 🙂
