I’ve recently come back from a few weeks in Europe, and without doubt one of my favourite dishes to choose in a restaurant was a simple Caprese salad. So I thought why not make a Syn free Caprese Pasta? Some good tomatoes, good cheese and a bit of greenery makes for a fantastic plate of food.

So, why not let it inspire a dish fit enough for a proper, grown up meal? Super simple to make, and quick too. This Syn free Caprese Pasta is the perfect meal to treat yourself to some of the ‘posher’ ingredients.

Go wild, splash out on the finest tomatoes money can buy, the best cheese and some thoroughly fresh basil. In the same vein, the dish can be accomplished using cheap as chips ingredients and you’ll still get a brilliant plate of food.

Using your Healthy Extra A choice on the mozzarella, it’s completely syn free. Of course it’s adaptable, less chilli means less spice if that isn’t your thing, or spend a couple of syns on some black olives, a great addition. As always, enjoy!

INGREDIENTS

INSTRUCTIONS
  1. Set oven to 200 degrees, coat the tomatoes in low calorie spray, salt and pepper and roast for around 30 minutes. Keep an eye on them so they don't burn.
  2. Meanwhile, chop the onions, chilli and garlic very finely and fry on a moderate heat in low calorie spray.
  3. Once the onions have turned a golden colour, take off the heat. Boil the pasta according to the packet instructions in salted water.
  4. Add the cooked pasta and roasted tomatoes to the onion mixture, adding the fresh basil also. Lightly mix until the ingredients are combined.
  5. Plate up, and add the mozzarella on top by tearing it into little pieces. Season and tuck in!
