As you will probably know last year Slimming World brought out some new recommendations regarding the syn value of granulated sweeteners. This means that:

Where there is 1 tbsp or more being used per serving they recommend you count 0.5 Syn per tbsp. If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.

The recipe for this Syn Free Carrot Cake with Syn Free Cream Cheese Frosting uses 3 tablespoons of sweetener and is divided into 6 portions. That’s half a tablespoon per portion, so there’s no need to add any syns on for the sweetener itself.

If you are using a powdered sweetener, then please check how it compares to sugar. In some cases you’ll need to use less, as powdered sweeteners weigh less.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

To make the Cakes
  1. Pre heat the oven to 180°C and line a muffin tray with 6 medium paper cupcake cases
  2. Pat the grated carrot dry on some kitchen roll
  3. Put all the ingredients together in a bowl and mix thoroughly
  4. Divide the mixture between the 6 cases then bake for 25 - 30 minutes
  5. Allow to cool and top with the frosting
To make the frosting
  1. Mix all the ingredients together and spread over the top of the cooled cakes

      As we say in the article Sukrin is a sweetener. You can get it from most supermarkets and independent health shops 🙂

      Quark is a fat free cream cheese, it has a thick, creamy texture similar to Greek yogurt or sour cream, and is syn free on Slimming World. You can get it from most supermarkets.

      The 6 Syns listed in the recipe are for the 40g oats if you’re not using them as your HEB. As you’re making 6 cakes with the mixture, they’d work out at 1 Syn each. Hope that clarifies things for you!

  1. If you are using 3tbsp sweetener for 6 cakes does that not equate to half a tbsp per cake not half a tsp as you say in the text? Or do you mean 3tsp sweetener in the recipe?

    How is it that if the cakes have 57 calories, they are syn free? I thought the calculation was 1 syn=20kcals? Which surely makes these cakes 2 and a half/nearly 3 syns? I dont know if this is because the recipe is older or…. ?

      A rough guide is 1 Syn for every 20 calories, but this only works for food that does not have a free food allowance. Several of the ingredients in this recipe have a free food allowance, namely the eggs, the yogurt and the carrots, but we have listed the total calorific value of all ingredients used.
      (p.s. Our recipes are constantly updated. 😉 )

      HEB is Healthy Extra B choice.

      Healthy Extra A choice is to provide Calcium – a measured amount of milk or cheese, or dairy free alternatives. Amounts vary depending on the type of milk or cheese.

      Healthy Extra B choice is for Fibre – wholemeal breads or cereals, some cooked fruits etc. Again, there are so many different types it’s impossible to list them all here.
