I do love it when an experiment turns out ok! We have an abundance of Chicken breasts in the freezer, and been trying to think of interesting ways to use them. This Syn Free Chicken Breast With Cherry Tomatoes, Balsamic & Mozzarella didn’t take very long to prep, nor did it take long to cook.
You can use the time the Chicken is in the oven to prepare any pasta/cous cous/ rice to go with it, or vegetables on an SP day.

I put 1/2 of our HEA for the Mozzarella, you could use cheddar instead. Just make sure to season well, no one wants to eat bland chicken!

If you have pans that are suitable for the oven you don’t have to use an oven tray or dish. Our Tefal Ingenio pans are a life saver when it comes to washing up!
