Syn Free Chicken Breast With Cherry Tomatoes, Balsamic & Mozzarella | Slimming World

I do love it when an experiment turns out ok! We have an abundance of Chicken breasts in the freezer, and been trying to think of interesting ways to use them. This Syn Free Chicken Breast With Cherry Tomatoes, Balsamic & Mozzarella didn’t take very long to prep, nor did it take long to cook.

You can use the time the Chicken is in the oven to prepare any pasta/cous cous/ rice to go with it, or vegetables on an SP day.

For the full list of ingredients and comprehensive instructions, please see the recipe card at the end of this post. Before you scroll, there’s important stuff in the blurb 👍

I put 1/2 of our HEA for the Mozzarella, you could use cheddar instead. Just make sure to season well, no one wants to eat bland chicken!

The beauty of Slimming World is that we’re not restricted on what we can have with the Chicken!

We cooked some pasta and used some tomato sauce left over from the Rotolo at the weekend. Super simple tomato sauce packed with speed. Take a look at the Rotolo recipe for ideas.

If you have pans that are suitable for the oven you don’t have to use an oven tray or dish. Our Tefal Ingenio pans are a life saver when it comes to washing up! You can get them fromAmazon & in my opinion worth every penny. We’re pretty pushed for space in our pan cupboard, and take up 1/3 or the space of a regular pan set!

Whenever we need to replace oil in cooking we use Frylight. Perfect for everyday frying and cooking, it delivers exactly one calorie per spray, which makes it Syn free! The Sunflower or Olive Oil flavours are ideal for this Syn Free Chicken Breast With Cherry Tomatoes, Balsamic & Mozzarella recipe.

  1. Preheat your oven to 200°C. Spray a large frying pan with a few sprays of Frylight and heat. Season the Chicken breasts with plenty of salt and pepper and fry for 6 minutes on each side then set aside
  2. Using the same frying pan (don't wipe) fry the onion & garlic until the onion starts to soften. Add the Balsamic, tomatoes and courgette (they'll bubble and that's ok) cook for 5 minutes stirring frequently
  3. Add the basil & return the chicken to the pan, cook for 3 minutes on each side
  4. Put the pan in the oven (or in an oven proof dish if your pan isn't suitable) and set a timer for 15 minutes
  5. After 15 minutes place the cheese on top of the chicken and cook for a further 5-10 minutes. Use a thermometer to check your Chicken breast is cooked through before serving (needs to get to 74°C for a couple of minutes)
  6. Serve with greens and your choice of pasta/rice or cous cous
