Our favourite way of making this recipe is in the slow cooker!

This Syn Free Hunters Chicken recipe only takes 3 hours or so on a high setting, but if you want to leave it on all day you should cook it on low or the chicken may dry out a little.

What do I need to make this Syn Free Hunters Chicken?

The Meat

For the chicken breasts, I’d urge you to get hold of our Protein Food Shop hampers.

They’re packed full of the BEST quality meat we’ve ever come across from an online butcher. The hamper is incredible value for money, working out FAR cheaper than the supermarket.

The chicken breasts are lovely, plump and don’t have that horrid vac-pack smell when you open them up!

The Slow Cooker

Slow cookers are great if you just want to throw everything in and have your dinner ready when you walk through the door.

You can pick up a slow cooker like this one from Amazon.

The Stick Blender

We use a stick blender like this to make the BBQ sauce Tower Hand Blender, because they are so easy to use and (just as importantly) so easy to clean.

This particular one has a masher attachment included, which is perfect for making our Syn Free Creamy Mashed Potatoes.

Cocktail Sticks

If you’re anything like us you’ll always have a pack of cocktails sticks lurking at the back of the cupboard, usually leftover from Christmas.

But if not you can pick some up from any supermarket or from Amazon.

How many Syns are in this Syn Free Hunters Chicken?

As the name suggests this is Syn Free…..but only if you are counting the cheese as half of your Healthy Extra A allowance.

If you’d rather Syn the cheese then it will work out at 3 Syns per portion.

Of course if you like it extra cheesy you could double the cheese and use your whole HEA or 6 Syns.

We use Schwartz Classic BBQ Seasoning in this recipe as it is Syn Free, but some aren’t so always check the Slimming World app or database.

How do I make this Syn Free Hunters Chicken?

Step 1

Take each chicken breast, wrap a bacon medallion around the middle.

Secure with a cocktail stick.

Step 2

Set the chickens aside, then add all of the remaining ingredients into the slow cooker and stir well.

Step 3

Place the chicken on top and replace the lid. Cook on high for 2.5 – 3 hours (or low if you’re leaving it on all day)

Step 4

When the time is up check that the chicken is cooked. Remove it from the slow cooker and set aside.

Step 5

Blitz the sauce with a stick blender until smooth.

Step 6

Place the cooked chicken in an ovenproof dish and remove the cocktail sticks.

Step 7

Pour the sauce over the chicken breasts and top with cheese.

Divide the cheese equally between all for chicken breasts.

Step 8

Place under a hot grill until the cheese is melted and a nice golden colour.

Can I freeze this Syn Free Hunters Chicken?

INSTRUCTIONS
Slow Cooker Method
  1. Take each chicken breast, wrap a bacon medallion around the middle and secure it with a cocktail stick
  2. Set the chickens aside, then add all of the remaining ingredients into the slow cooker and stir well
  3. Place the chicken on top and replace the lid. Cook on high for 2.5 - 3 hours (or low if you're leaving it on all day)
  4. When the time is up check that the chicken is cooked. Remove it from the slow cooker and set aside
  5. Blitz the sauce with a stick blender until smooth
  6. Place the cooked chicken in an ovenproof dish and remove the cocktail sticks
  7. Pour the sauce over the chicken breasts and top with cheese. Divide the cheese equally between all for chicken breasts
  8. Place under a hot grill until the cheese is melted and a nice golden colour
Oven Method
  1. Take each chicken breast, wrap a bacon medallion around the middle and secure it with a cocktail stick

  3. Place the chicken on top and replace the lid. Cook for 1 hour at 180°C
  4. When the time is up check that the chicken is cooked. Remove it from the dish and set aside
  5. Blitz the sauce with a stick blender until smooth
  6. Place the cooked chicken in an ovenproof dish and remove the cocktail sticks
  7. Pour the sauce over the chicken breasts and top with cheese. Divide the cheese equally between all for chicken breasts
  8. Place under a hot grill until the cheese is melted and a nice golden colour

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)
- Make sure it is piping hot all the way through before serving.

If making this recipe Gluten Free please make sure to check the ingredients that you’re using

Especially things such as; 

- Stock cubes
- Soy sauce - substitute with Tamari.
- Worcestershire sauce - substitute with Henderson’s Relish.

      It should be ok in the pressure cooker. You’d need to check the manual for your particular model as timings will vary. Use the timings suggested for chicken breasts.

  3. Hi. Is this recipe spicy? Just wondering because of the hot buffalo sauce and the paprika. So many slimming world friendly recipes that I’ve tried are so spicy that I can barely eat them let alone think about risking it on the kids too

      If you’re referring to the oven method, it may take slightly less time. Obviously ovens do vary. Ideally you should follow the recipe step by step to achieve the best result. 🙂

  4. At what point would you recommend freezing it? Just before the chicken is added to the oven to melt the cheese, from the slow cooker method?

      Yes, don’t add the cheese before freezing, just freeze the chicken and sauce. Once defrosted, add the cheese and reheat in the oven until chicken is piping hot. 🙂

      Franks hot sauce is a chilli sauce available from larger supermarkets. If you can’t find it, a pinch of chilli flakes will work. 🙂

      You need to freeze this before you add the cheese. Defrost in the fridge, preferably overnight. Reheat in the oven covered with foil until piping hot throughout. Add the cheese and flash under a hot grill to finish.

  5. Has the method for this changed? I’ve done this a few times before (but not for a while) and I’m sure I did the sauce on the hob first and I know I didn’t blend anything.
    About to do it now and it’s confused me.

      It’s suitable for vegetarians and vegans, so should be fine! 🙂

      You could use lime juice, or leave it out altogether. I’d probably use a little less lime juice than the amount suggested for lemon juice.

  7. Hi, love love love your recipes…thank you! Can this be made without the bacon? Also, can’t get hold of the franks buffalo wings hot sauce -looked in most supermarkets. Is there an alternative…or will it be just as yummy without? Thanks 🙂

      So glad you’re enjoying the recipes! You can omit the bacon if you don’t want it. If you can’t get hold of Franks Hot Sauce, you can either add a pinch of chilli flakes or leave it out altogether. 🙂

      You could reduce the amount of vinegar to suit. As with all recipes, personal tastes do vary. If you prefer a thicker sauce, blend it and then heat on the hob until it has reduced to your desired thickness before pouring over the chicken and adding the cheese.

    1. The balsamic vinegar and mustard powder are both in the recipe to give a flavoursome sauce. You can leave them out if you’d rather, but you won’t get quite the same flavour.

  8. Hi my kids found the sauce a bit tangy, not quite as sweet as other, although less healthy recipes.
    Is there anything I can do to adjust to make it more family friendly but still healthy?

      You can adjust the ingredients to suit your personal tastes. Perhaps reduce the vinegar slightly and add a little more granulated sweetener.

      Ideally you should use it, as the white wine vinegar balances the flavours in the dish. However, if you really don’t want to use it, you can leave it out. 🙂

      You could try making your own blend using a mix of herbs and spices. Paprika, Ground black pepper, Chili powder, Garlic powder, Onion powder and maybe a touch of Cayenne pepper (optional) and adjust to taste.

      It’s GF and suitable for vegetarians and vegans, too! (And far superior, in my opinion!!)
      Obviously when catering for someone on a restricted diet, it’s essential to check labels for Spice mixes, etc.

  13. Great recipe! Just made this in oven with chicken fillets and normal bacon (fat removed) so didn’t wrap them, just laid pieces on top of the sauce. Word of warning re blitzing sauce – be careful if your dish isn’t that deep or you will peddledash yourself & the kitchen! Served with mini SW roasties & carrots. 😋

      Blending just gives a smooth finish to the sauce. If you don’t mind it with a more ‘rustic’ finish, the it’s fine! 🙂

      As long as the chicken is in a single layer and not too tightly packed into the dish, 3 to 4 hrs on high should be sufficient.
      We would always recommend using a meat thermometer to ensure that the chicken has reached optimum temperature and is thoroughly cooked. 🙂

      We give the Syn value and WW points information, plus calories. We don’t have the resources to give any further nutritional breakdown at the current time, I’m afraid.

I want to cook this later today but just realised i haven’t got any of the franks buffalo wings hot sauce, would it be okay to use hot & smoky chipotle chilli sauce or I have Schwartz crushed chillies or cayenne pepper.? If these are ok as an alternative to franks sauce, how much should I use?

      The Syn value on the app is 0.5 Syns per 3 level tablespoons. As this recipe uses 1 level tablespoon and is divided between 3 servings, the Syn value is negligible. Hope that makes sense! 🙂

  24. Im on hour 5 of this in the slow cooker on high and my chicken still isnt cooked 😥 not sure what im doing wrong ? Should i just finish cooking the chicken in the oven?

      It sounds as though there might be an issue with your slow cooker. 5 hours on high should be plenty of time for your chicken to cook. If it’s not too late, I’d suggest finishing it off in the oven. 🙂
