We love these slimming friendly Loaded Potato Skins – they’re really tasty and great if you’re calories counting or following a plan like Weight Watchers.
We’ve gone for heaping some delicious cottage cheese and spring onion on top of our skins, but you can load them with whatever you like. We’ve enjoyed variants such as bacon and cheese, cheese and onion, chilli and cheese, chicken and bacon – but the choice is yours!
These Loaded Potato Skins are totally adaptable to taste too – if you like spicy food, add some chilli powder and flakes. You can keep them meat free or not, it’s up to you. They go rather nicely with our Pulled Pork!

Step 1
Prick potatoes and place them into the microwave on high for 10 minutes.

Carefully cut the potatoes in half – they will be very hot. Gently scoop out the fluffy middle into a bowl. Place the skins aside onto an oven tray.
Step 3
In the bowl mix in the cottage cheese, salt and pepper and mash well. Place back into the skins and spray the top of them with the Low calorie cooking spray.
Step 4
Cook for 30 minutes at 200°C – enjoy!

How do you know when Loaded Potato Skins are cooked?
The potatoes should be placed into the microwave on high for 10 minutes once pricked.
Cook the mix for 30 minutes at 200°C.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Loaded Potato Skins in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.

I love this recipe, instead of the oven I put them in the air fryer at 200 degrees for 6 mins, a bit longer if you want them crisper.
