Any Spanish cuisine experts, look away! I don’t claim this to be an accurate representation of the original Spanish dish, but it’s loosely based on the tapastastic delight. Spiced potatoes in a tomato sauce, with a few little extras. Syn free on Slimming World Extra Easy, and very tasty indeed. Can be served on its own or as a side dish.

We like to use Sukrin, which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. It doesn’t have that strange after taste that a lot of artificial sweeteners do, which makes it perfect for cooking and baking.

Sukrin is in equal and weight to sugar, so if you're using a powdered sweetener you'll need to use less as it weighs less.

INSTRUCTIONS
  1. First off, cube the potatoes and coat them in the Spicentice Chipoltle Rub. Spray with Frylight and cook in a high heat oven until crunchy on the outside, soft inside. Usually around 30-40 minutes.
  2. Meanwhile, chop the onions and fry them up with the kidney beans until golden and cooked.
  3. Once the potatoes are done, add to the onions and beans, and add the passata. Cook for another 5-10 minutes until nicely combined. Enjoy!

      You can use any Mexican Spice mix or rub, but make sure you check the syn value as a lot of them are packed full of sugar
