As soon as the weather starts to get cooler, pumpkin spiced food and drink starts to pop up everywhere, and our Pumpkin Spiced Latte Waffles are the perfect way to enjoy this flavour without all of the usual additional calories.
You can enjoy these Pumpkin Spiced Latte Waffles for breakfast or as a yummy dessert – we love them topped with quark and piles of fresh berries!
If you can’t get hold of a pumpkin you can use some butternut squash instead. It works just as well!

What is Sukrin?
Sukrin 1 is an all natural sugar alternative that doesn’t have that nasty artificial taste that other artificial sweeteners do. If you haven’t tried it yet you really should!

We like to add a boost to the coffee flavour in these Pumpkin Spiced Latte Waffles by adding some coffee extract. You can pick this up in most supermarkets, but also online at Amazon!

Step 1
Preheat the oven to 180°C.
Step 2
Blitz the oats in a food processor until they are quite fine and set aside.
Step 3
Cut a 100g (4oz) piece of pumpkin or butternut squash. Cut off the peel, chop it into small chunks then place in a microwavable bowl. Cover and microwave for about 3 minutes or until it is soft enough to puree.
Step 4
Puree the pumpkin or squash in a food processor, or pass through a sieve so it’s smooth.
Step 5
Take 50 – 70g (1/2 cup) of this puree and mix it with all the other ingredients. Stir well.
Step 6
Spray the waffle mould with a little low calorie cooking spray then pour in the waffle mixture.
Step 7
Bake at 180°C for 25 – 30 minutes or until the waffles are firm to the touch.
Step 8
Turn them out onto a baking tray and cook for a further 4 or 5 minutes.
Step 9
Serve with some fresh fruit and some sweetened, flavoured quark.
