Our Pumpkin Sushi is super tasty, really cute and perfect if you’re counting calories or following a plan like Weight Watchers.

Despite the name, this recipe doesn’t actually have any pumpkin in it, instead this Pumpkin Sushi gets its colour from orange food colouring.

These little pumpkins are absolutely perfect for keeping the kids entertained in the run up to Halloween and would make a great addition to any Halloween buffet table.

They’re also a fantastic way to get more vegetables into the kids’ diets as they have carrots hidden in with the orange rice! Finished with an olive face and a green bean stalk, this Pumpkin Sushi makes a great bitesize treat.

How many calories are in this Pumpkin Sushi recipe?

This Pumpkin Sushi is perfect if you’re following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers.

Step 1

Peel the carrots and chop then roughly. Cover with water, add a little salt and pepper. Cook until the carrots are cooked through.

Step 2

While you’re waiting for the carrots to cook, put the rice and water in a pan. Add the stock cube, turmeric, garam masala, rice wine vinegar and orange food colouring.

Step 3

Cook the rice as per packet instructions (probably around 15 minutes or so).

Step 4

Drain the carrots and puree them in a food processor.

Step 5

Mix the carrot puree in with the cooked rice. Check the seasoning and then leave to cool enough to handle.

Step 6

Take 2 tablespoons of rice and mould it into a pumpkin shape. If the rice sticks to your hand then wetting your hands with a bit of water will help.

Step 7

When you have moulded the rice (you should get about 12 from the mix) cut 6 thin slices of olive, then cut each slice in half to make a mouth.

Step 8

Cut another few slices of olive, then cut 24 small cubes out of the slices. These will become the eyes.

Step 9

Press a mouth and 2 eyes into each rice ball to form the face of the pumpkin.

Step 10

Cut the tip off 12 green beans and stick them in the top of each ‘pumpkin’.

Step 11

Chill, then keep refrigerated until you’re ready to serve.

How do you know when your Pumpkin Sushi is cooked?

You’ll need to cook your rice according to the packet instructions (probably around 15 minutes or so) or until the rice is tender and slightly al dente.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Pumpkin Sushi in the fridge?

Make sure to refrigerate your Pumpkin Sushi in a container with a lid and chill. You can keep leftovers of Pumpkin Sushi in the fridge for around a day.

Although this Pumpkin Sushi doesn’t need to be reheated, as always when cooking with rice, please heed the following advice:

As we all know you can get food poisoning from eating reheated rice, but, it’s not actually the reheating that can cause issues, it is, in fact, the way that the rice has been stored beforehand where the problem begins.

Rice can contain spores that are resistant to heat and can survive the cooking process.

If cooked rice is left standing at room temperature these spores can grow into bacteria. At this point, the bacteria can be destroyed by reheating the rice thoroughly.

You should remember to do the following if you’re going to keep leftover rice:

  • Cool the rice as quickly as possible (ideally within one hour) then put it in the fridge immediately. You can split larger portions up into smaller batches to cool quicker.
  • Reheat and use any leftover rice (stored in the fridge) within one day.
  • When you reheat any rice, always check it is steaming hot all the way through.
  • Don’t reheat cooked rice more than once.

Can I freeze Pumpkin Sushi?

Ingredients

  • 250 g short grain rice such as arborio or sushi rice
  • 400 ml water or as instructed on the rice packet
  • 1 stock cube chicken or vegetable
  • 2 carrots
  • Few drops orange food colouring add as little or as much as you need to get the orange colour
  • 2 - 4 black olives
  • 12 green beans tips only
  • 1 tsp turmeric
  • 1 tsp garam masala or curry powder
  • sea salt
  • freshly ground black pepper
  • 1 tbsp rice wine vinegar
