These Mini Pumpkin Pies are the perfect winter treat and are a great sweet treat if you’re counting calories or following a plan like Weight Watchers!

As soon as the nights start getting shorter and the weather gets cooler, pumpkin spiced food and drink starts to pop up everywhere. We absolutely love this flavouring, but it can be difficult to enjoy these treats without going over your calories or Points.

Our Mini Pumpkin Pies use filo pastry which is really easy to use and cooks quickly. Filo pastry is often so underrated, but we love it as it’s low in calories and Points which makes it slimming friendly!

These Mini Pumpkin Pies always go down a treat at Halloween and Christmas parties – they’re also a great snack to satisfy your sweet tooth!

How many calories are in these Mini Pumpkin Pies?

Step 1

Pre heat the oven to 160 degrees.

Step 2

Spray a mini muffin tin with low calorie cooking spray. Cut the sheet of filo pastry into 32 squares and use 16 to line the mini muffin tin. Spray again with low calorie cooking spray and put a second piece of filo into each of the 16 cases.

Step 3

Bake for 5 minutes.

Step 4

Meanwhile, in a food processor place the pumpkin, almond milk, granulated sweetener, eggs and spices and mix until smooth.

Step 5

Take the filo cases out of the oven and fill with the pumpkin mixture.

Step 6

Bake for 10 minutes.

Step 7

Serve warm or cold, with an optional dusting of icing sugar.

Ingredients

  • 1 sheet filo pastry
  • 150 grams cooked pumpkin or butternut squash
  • 50 mls unsweetened almond milk
  • 2 tbsp granulated sweetener
  • 2 eggs
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp nutmeg ground or finely grated
  • low calorie cooking spray
