Who doesn’t love eating up the leftovers from Christmas Day? We love putting together this tasty Christmas Hash because it’s so simple to fry together and bake in the oven until it’s crispy and golden.
You can use any combination of Christmas veggies for this herby hash bake. We’ve used leftover roast potatoes, sprouts and carrots for our hash base, but feel free to add any tasty spare veggies you have. Broccoli, parsnips and green beans would work great too!
We’ve added some sweet, dried cranberries and chopped herbs to refresh the festive flavours. Why not plate this one up with a fried egg? It’s a Christmas treat the whole family will enjoy.

Step 1
Preheat the oven to 180°C. Spray a frying pan with low calorie cooking spray, add the leeks and garlic and fry for 3 minutes. Add the bacon and sausage and continue to fry for a further 4 minutes.
Step 2
To an ovenproof dish add the sprouts, carrot, potatoes and cranberries. Once cooked, add the contents of the frying pan to the vegetables along with the rosemary and sage.
Step 3
Give the dish a good stir to fully incorporate all the ingredients. Pop into the oven for 15 minutes until golden brown and crispy round the edges.
Step 4
When nearly cooked, spray a frying pan with low calorie cooking spray and set on medium heat. Cook your eggs to your liking and serve alongside the vegetable hash.
