This irresistible sweet treat is our slimming-friendly take on Cranachan, Scotland’s answer to Eton Mess. Usually made from rich double cream and a type of soft cheese called Crowdie, we’ve cut down the calorie count by making a couple of simple swaps. 

Using a light double cream alternative such as Elmlea helps to keep this pudding nice and light, without losing out on any of the indulgent flavour. We’ve mixed it with reduced-fat cream cheese, although you can use Crowdie if you can find it (just factor in the additional calories, if you’re counting). 

Sweetened with honey, laced with Scotch whisky and layered with raspberries and toasted oats , this is a proper, grown-up dessert that’s so quick and easy to put together. Whip it up and leave it to chill in the fridge while you eat dinner – it’s a dreamy end to any meal. 

What diets is this Cranachan suitable for?

This Cranachan recipe is vegetarian. It can be made suitable for gluten-free diets, as long as you substitute the oats for a gluten-free version.

How many calories are in this Cranachan?

There are 250 calories per portion in this Cranachan recipe, which means it falls into our Weekly Indulgence recipe category. If you’re counting calories or following one of the popular diet plans like Weight Watchers, this recipe fits in perfectly!

NHS guidelines suggest men should aim for 2,500 calories per day to maintain a healthy body weight, and women require around 2000 calories. Step 1

Reserve a few raspberries for garnish, and place the rest in a bowl. Sprinkle over the sweetener or sugar, cover and allow to macerate for 30 minutes.

Preheat the oven to 200°C. Scatter the oats evenly over a baking tray and place in the oven for around 10-15 minutes, until the oats are toasted and golden brown. Shake the tray halfway through to ensure even browning. Allow the oats to cool.

Place the cream cheese, double cream alternative, honey and whisky in a mixing bowl and use a whisk to lightly whip until it is well combined and forms soft peaks. This should only take a minute and you won’t even need an electric whisk!

Fold in the cooled oats. Taste and add more whisky or honey if you like.

Lightly crush the raspberries, using a fork, leaving some chunks.

Now, layer your Cranachan into 4 individual glass bowls. Place a spoonful of raspberries in the bottom of each bowl. Top with half the cream mixture, spread the remaining crushed raspberries on top, then spoon the remaining cream mixture on top.

Step 7

Decorate the top with the reserved whole raspberries.

How do you know when Cranachan is cooked?

The only bit of cooking for this recipe is toasting the oats until they’re golden. This should take around 10-15 minutes in the oven. 

Here in the UK, the standard advice is to cook food until it has reached 70°C and maintained that temperature for 2 minutes. This is to keep you and your family safe! 

How long can you keep Cranachan in the fridge?

Once you’ve served it, ideally you should eat this dish within 4 hours.

Any leftovers can be kept in an airtight container in the fridge for up to 2 days. 

Can I freeze Cranachan?

This recipe is not suitable for freezing.

Love the new cranachan recipe and would love to include it in my Burns night dinner that I am making for my family. However, over half of the family can’t have alcohol and so what can I use instead ? Thanks

    Hey Liz, you can omit the whiskey from this recipe and it will still taste great!
