How do you know when Curried Creamy Carrot Soup is cooked?

Ingredients

  • 1 medium onion peeled and finely chopped
  • 1 garlic clove peeled and crushed
  • 1 tbsp mild curry powder
  • 5 large carrots peeled and cut into 1cm chunks (approx. 600g)
  • 2 medium potatoes peeled and cut into 1cm chunks (approx. 350g)
  • 1 litre vegetable stock (1 vegetable stock pot dissolved in 1 litre of boiling water)
  • 4 tbsp reduced-fat cream cheese
  • salt and black pepper to taste
  • low-calorie cooking spray

Made this soup yesterday and sent a picture and comments. On the gallery page. This recipe is so easy to make and so nutritious and tasty, a real good quick make for lunch. I made it in the soup maker so win win all done chopped and cooked and blended within 25 minutes ready to serve. Have batch cooked and got some in the freezer. Oh my days! Made the curried creamy carrot soup last night after receiving the recipe in my email. Didn’t have mild curry powder so used medium and it’s amazing!! Spot on for a dreary wet lunchtime! This one will be made again and again, so easy to make too! Well done!
