Quorn Cheese & Broccoli Escalopes – 230 calories per escalope

Quorn Cheese & Broccoli Escalopes, featured in Pinch of Nom's Weekly Pinch of Shopping with the calorie count printed above (230 calories per escalope).

For a veggie-friendly midweek dinner, these Quorn Cheese and Broccoli Escalopes are handy to have in the freezer. Inside the golden breadcrumb coating, each escalope is hiding an oozy layer of cheese and broccoli, on top of a high-protein meat-free filling.

It’ll only take 20 minutes in the oven to get these piping hot on the inside, and lovely and crunchy on the outside. We’d dish them up with a side of our Air Fryer Rustic Potato Wedges, to get dinner on the table in under half an hour.

You only need a few spuds and a sprinkling of seasoning to make this easy recipe, and it works well in the oven too, if you don’t have an air fryer. We have a separate oven method right here.

Pinch of Nom's Air Fryer Rustic Potato Wedges served in a restaurant-style basket on colourful baking paper; crispy and golden brown with a pot of ketchup ready for dipping.

Quorn Cheese & Broccoli Escalopes are available from Iceland, priced at £2.65 for a pack of 2.

Great for taking out and about, the crispy snacks are bundled into packs of 2, so you can always have a healthy treat within reach. At 63 calories per slice, they’ll keep your sweet tooth happy, while slotting easily into your meal plan.

Iceland Ready To Fill Potato Skins – 95 calories per 100g

Iceland Ready To Fill Potato Skins, featured in Pinch of Nom's Weekly Pinch of Shopping with the calorie count printed above (95 calories per 100g).

Hands up if the crispy skin is your favourite bit of a jacket spud! We’ve spotted these Iceland Ready To Fill Potato Skins and they’re a game changer for easy lunches and dinners.

Rather than waiting hours for your potatoes to roast, these will be golden brown after 20 minutes in the oven (or 13 minutes in an air fryer!). The potato in the centre has been scooped out, leaving plenty of room for your choice of toppings. Beans, tuna mayo, leftover Chilli Con Carne – anything goes!

Why not take inspiration from our Chilli Stuffed Sweet Potato ? Once your spuds are loaded with filling, top them with cheese and pop them under the grill for 5 minutes, until it’s all gooey and glorious!

An oven tray is filled with Pinch of Nom's slimming-friendly Chilli Stuffed Sweet Potato Skins. Each one is stuffed with chilli con carne, mashed sweet potatoes and topped with melted cheese.

Iceland Ready To Fill Potato Skins are available from Iceland, priced at £2.00 for 400g.
