You’ll find bags of flavour in this gorgeous Spicy Pork Stew. We’ve used a nifty blend of super simple store cupboard staples to whip up a sauce that’s so delicious, it tastes just as good as restaurant versions.
A fragrant, aromatic stew, we’ve turned up the heat by stirring in fresh chopped chillies and dried chilli flakes. The warm flavours make this one absolutely perfect to serve on a chillier night, over a fluffy bed of basmati rice or creamy mashed potatoes – to soak up every last drop!
Once everything is combined in your casserole dish, leave it to bubble away until your pork is fall-off-the-fork tender, and your kitchen is filled with amazing smells. We like it best served with coriander sprinkled on top, to really enhance the flavours – but you can skip it, if you’re not a fan.
You can make this dish in an Instant Pot or your slow cooker, if you’d prefer.

This Spicy Pork Stew recipe is ideal when following any of the larger diet plans such as Weight Watchers or counting calories.

Step 1
Preheat the oven to 170°C.
Step 2
Spray a frying pan with low-calorie cooking spray and set the pan on a medium heat. Add the diced pork and season with a little salt and pepper. Fry until lightly browned on all sides.
Step 3
Add the onion, garlic, chilli and the pork to a casserole dish. In a jug combine the stock pot and water along with the tomato puree, Henderson’s relish, cider vinegar, sweetener, cumin, mustard powder and chilli flakes. Stir to combine.
Step 4
Pour the stock into the casserole dish and give the pot a stir. Cover with the lid and place into the oven.
Step 5
Cook for 3 hours then add the red pepper. Cover with the lid again and cook for a further 30 minutes.
Step 6
Sprinkle with coriander, if using, and serve with your choice of accompaniment.

How do you know when Spicy Pork Stew is cooked?
You’ll need to cook this Spicy Pork Stew for around 3-4 hours or until the sauce has thickened and the pork is cooked through.

Wow I made this in the slow cooker yesterday it was delicious. We love spicy things so I added more chillies and made it a little bit too spicy lol
