If you’re looking to impress guests at your next barbecue or garden party, you’re on the right recipe! This lovely-looking Pimms Jelly recipe has all the flavours of the beloved summertime staple tipple, in a wibbly-wobbly jelly dessert.

We’ve combined Pimms and ginger ale with gelatine leaves and a juicy-sweet medley of strawberries, cucumber, mandarin segments and raspberries. The results are oh-so-satisfying for a sunny day, especially with a sprinkling of finely-chopped mint leaves on top!

You’ll want to pick up light ginger ale to give your mixture a punchy hit of fizz for fewer calories. A pitcher of Pimms used to be our go-to for watching Wimbledon but now that we’ve tried the drink of the tournament in jelly form, we can’t get enough!

Add the gelatine leaves to a bowl and cover with cold water. Leave to soak for 5 minutes.

Add the Pimms to a small saucepan and heat on a very low heat while the gelatine is soaking. Squeeze out the gelatine leaves and add to the saucepan. Stir with a balloon whisk until the gelatine has dissolved. Add ginger ale and lime juice.

Step 3

Split the strawberries, raspberries, cucumber, mint and mandarin between the 4 serving dishes. Pour over the Pimms jelly mixture.

Leave the jelly to set in the fridge and serve.

Ingredients

  • 300 ml light ginger ale
  • 100 ml Pimms
  • 4 gelatine leaves
  • 1 tsp lime juice
  • 25 g cucumber thinly sliced
  • 2 strawberries sliced
  • 50 g mandarin segments from a can in natural juices
  • 8 raspberries
  • 2 g fresh mint finely sliced

Instructions

  1. Add the gelatine leaves to a bowl and cover with cold water. Leave to soak for 5 minutes.
