This colourful beetroot tart is a dish that looks like it takes a long time to prepare, but is actually assembled in just over half an hour – an ideal option if you’re hosting or are simply on the go. A simple and light puff pastry base is topped with vibrant beetroot, red onion and salty feta, it’s tasty on the tongue and easy on the eye. We’ve finished it off with a sweet and tangy honey and balsamic drizzle to add even more flavour. Pair it with a side salad and serve warm or cold.
