Add the balsamic, tomatoes, and courgette, and cook for 5 minutes — stirring frequently.
Step 4
Add the basil, and return the chicken to the pan.
Step 5
Put the pan in the oven (or in an oven-proof dish if your pan isn’t suitable) and cook for 15 minutes.
Step 6
After 15 minutes, place the cheese on top of the chicken, and cook for a further 10 minutes. The chicken should be cooked through, with no sign of pinkness, and the juices should run clear.
Step 7
Serve with greens and your choice of pasta, rice, or cous-cous.

Made this last night. Lovely flavours and enough “sauce” from the dish to stir through pasta and put the chicken breast on top. Served it with peppers, mushrooms, green beans and tender stem broccoli. Another favourite 👍

I’m new to cooking, in the ingredients when it says ‘400 ml meat stock made with 1 chicken stock pot and 1 beef stock pot’ can you simplify this does it mean mixing stock pots with 400ml water, sorry if I’m sounding thick x

I made this recipe yesterday and was surprise no stock or water in recipe. Then I read comments and realise there should have been. Read recipe again, still cannot see it. Can you tell me where I have gone wrong.

I think the comment was a general query regarding stock and wasn’t specific to this recipe. The liquid in this recipe comes from the balsamic vinegar and the juices released from the tomatoes as they cook.You don’t need to add any stock or water. Hope this helps.
