Parmentier Potatoes is a recipe named after an 18th century Frenchman who advocated for potatoes so much, he was alleged to have given bouquets of potato blossoms to royalty!

We like to think we’re carrying on this important pro-potato work with our slimmed down version of a dish that’s typically swimming in oil, so it’s ideal for anyone following diets like Weight Watchers. Crispy and golden brown on the outside and fluffy on the inside, these Parmentier Potatoes can be cooked in an oven or an air fryer for convenience.

We’ve used simple store cupboard staples for seasoning, so you can whip this up as a super side dish on the days you don’t feel like chips or mash!

Pre-heat the oven to 220°c.

Step 2

Add the cubed potatoes to a pan of boiling water and parboil for 10 minutes. They should still be firm when you take them out. Drain off the water.

Spray a baking tray with low calorie cooking spray and spread the potato cubes on the tray. Spray again with low calorie cooking spray and sprinkle over the garlic and rosemary.

Step 4

Place the potatoes in the middle of the hot oven for 20-25 minutes, until golden and crispy on the outside and soft in the inside. Serve as a side with your favourite main.

How do you know when Parmentier Potatoes are cooked?

You should cook the potatoes until golden and crispy on the outside and soft in the inside, which takes around 25 minutes. You could cook them in an air fryer too, which would be slightly quicker.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Parmentier Potatoes in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill.  You can keep leftover Parmentier Potatoes in the fridge for approximately 3 days or so.

Can I freeze Parmentier Potatoes?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

How do I reheat Parmentier Potatoes?

From chilled: Place on a baking sheet, sprayed with a little low calorie cooking spray and reheat in a hot oven for 5-10 minutes.

From frozen: Allow to defrost and reheat as above.

  • 750g potatoes peeled and cut into 1cm cubes
  • 2 tsp garlic granules
  • 1 tsp dried rosemary
  • low calorie cooking spray
  • salt and pepper to taste

I do them in the ninja. No par boiling. Super easy and quick! . They take about 15 min, depending how small they are(give it take a few mins), keep turning them every 4 mins like u do chips. 👌

    Hi Hannah, yes, you could cook these in an airfryer, they should take less time than the 25 minutes stated in the oven method. Hope you enjoy the recipe!
