Ingredients

  • 4 gammon steaks, approx. 125g each, all visible fat and rind removed
  • 1 tsp mustard powder
  • 1 tsp garlic granules
  • black pepper to taste
  • 400 ml semi skimmed milk
  • 25 g reduced fat spread
  • pinch of ground nutmeg
  • 1 bay leaf
  • 2 tbsp cornflour
  • 1 tbsp water
  • 2 tbsp fresh parsley chopped
  • low calorie cooking spray
  • parsley sprigs to garnish

The sauce tastes amazing but I’m not sure what I did wrong. After adding the cornflour slurry it almost turned into gelatine & had lumps all throughout, so I ended up having to strain it through a sieve. Any ideas? Was the sauce too hot when I added the slurry, do you think? X

    Hey Claire, sorry to hear you’ve had a little trouble with this recipe. Mix the cornflour with cold water into a slurry then add to the pan it should be just warm then bring the mixture to the boil with the cornflour already added this should stop any lumps forming. Hope that helps!
