Leftover turkey is so versatile and can be used in soups, salads, sandwiches and so much more! We’ve turned leftover turkey into deliciously rich BBQ Turkey Sliders and Christmas Slaw, for a Boxing Day treat that’s on a whole new level!
Sliders are a relatively new concept to the UK but they’ve been really popular in the States. They’re smaller, grabbable burgers that are cooked all at once and great for feeding groups.
Perfect for family gatherings, these sliders are ideal for a grab and go dinner or as part of a wider table of dishes. Try serving with Cheese and Pickle Twists on the side?
It’s a real family pleaser: tender pulled turkey, gooey cheese and a refreshing festive slaw – what’s not to love?
The Christmas slaw is really quick and simple; it’s made from fresh veggies that you can find all over the supermarket in the run up to Christmas, and it makes a delicious topping to jacket potatoes or alongside other side dishes as part of a buffet, so it’s worth making a batch and keeping it in the fridge for a day or two.

We’ve used our own recipe for the Cranberry and Pomegranate Sauce in this dish, but you can substitute for shop bought if that’s easier as long as you take care to adjust the nutritional value.
If you don’t have any leftover turkey, you can poach a turkey breast ready to be shredded instead.
Chipotle paste is made from dried chillies blended into a paste giving a warm smoky flavour; if you can’t find it in the supermarket you can try to make this yourself!

Step 1
Add all of the Christmas slaw ingredients to a mixing bowl and stir until the vegetables are fully coated. Cover with cling film and place in the fridge.
Step 2
Spray a frying pan with low calorie cooking spray and set on a medium heat. Add the onion and fry until soft then add the garlic.
Step 3
Once the onion and garlic are soft, add the BBQ sauce, BBQ seasoning, tomato puree, chipotle paste and rice wine vinegar stir until fully combined.
Step 4
Add in the shredded turkey and passata to the pan and allow the pan to bubble until the turkey is heated through. Preheat the oven to 180ºC.
Step 5
Place the bottom half of the bread rolls onto an oven tray and pack the rolls quite tightly together. Spoon the BBQ turkey mixture onto the bottom half of the rolls until all used up. Add a slice of cheese on-top of each bun.
Step 6
Pop into the oven for 10 minutes. Add the low-fat spread to a small bowl and melt for 30 seconds in the microwave. Stir in the dried parsley.
Step 7
Spoon a little of the cranberry sauce onto the top half of each roll, replace each lid on-top of the turkey and brush the top of each roll with the spread and parsley mixture.
Step 8
Pop back in the oven for another 10 minutes and cover the rolls with tin foil if they are beginning to brown too much.
Step 9
Remove the sliders from the oven and add a little of the rocket to each slider. Serve alongside the Christmas slaw.

You should cook these BBQ Turkey Sliders and Christmas Slaw until the top of the rolls are golden. This should take around 20 minutes, including adding the parsley mixture for extra flavour.
