If you’re looking for a tasty alternative to potatoes then these Butternut Squash Roasties are the perfect choice. Herby, garlicky and super crispy, they’re the ideal side dish to pretty much any meal.

We’ve cut our butternut squash into 4cm cubes as they’ll shrink a little during cooking and cutting them to this size means that you’ll still have good sized Roasties to serve.

Although you’ll need to remove the seeds from your butternut squash before roasting, don’t throw them away. When baked and seasoned, butternut squash seeds make a tasty snack and are great if you fancy a change from crisps.

We’ve used light olive oil spray for our Butternut Squash Roasties as we think it adds a better flavour, but if you wanted to reduce the calories even more then you can use a low calorie cooking spray instead.

Not a fan of rosemary and thyme? Get creative and play around with your favourite flavour combinations!

We’ve cooked our Butternut Squash Roasties in a 35 x 25cm ovenproof dish, but any size dish would do!

How do you know when these Butternut Squash Roasties are cooked?

You’ll need to cook these Butternut Squash roasties until they’re soft in the centre and brown and crispy on the outside. This should take around 1 hour and 10 minutes.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

Ingredients

  • 800 g butternut squash peeled and seeds removed, cut into 4cm chunks
  • 2 cloves garlic peeled and crushed
  • 2 tsp fresh thyme leaves only, stalks removed
  • 2 tsp fresh rosemary stalks removed and leaves chopped
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • light olive oil cooking spray
  • extra thyme and rosemary leaves to garnish optional

    Hey Victoria, frozen butternut squash chunks would work great just keep on eye on them when they are cooking as if they are chopped quite small they may cook quicker. Hope that helps!
