The traditional Spanish version of this sauce can be fairly complicated, taking a long time and lots of ingredients to build flavour. Our Cheat’s Romesco saves hassle by using tinned tomatoes and jarred peppers – so it’s quick and easy but definitely not lacking in flavour!
This sauce is made by blending together the ingredients until it’s similar to a pesto. It can be ready in less than 10 minutes and it’s just 60 calories per serving! This Cheat’s Romesco will be your new favourite way to add instant flavour to your meals.
Romesco was originally created to be served with fish but we think our version is super versatile. You can serve it hot or cold and be as creative as you like! Try stirring it through freshly cooked pasta, mixing it with some roasted vegetables or drizzling over white fish.
Our favourite way to serve this Cheat’s Romesco is to use it to top a griddled lamb steak – trust us it’s delicious!

Do you need any special ingredients to make Cheat’s Romesco?
Everything you need can be found easily in the supermarket. You will need a jar of roasted red peppers which can come in either vinegar or brine. If you use the brine version you will need to add a couple of tablespoons of red wine vinegar into the recipe before you blend it together.

How many calories are in this Cheat’s Romesco?
There are 60 calories per portion in this Cheat’s Romesco recipe, which means it falls into our Everyday Light recipe category. If you’re counting calories or following one of the popular diet plans like Weight Watchers, it fits in perfectly!

Step 1
Place the frying pan over a medium to high heat. Add the almonds to the dry pan and toast them for 3-4 minutes, stirring all the time, until they are golden brown.
Step 2
Allow the almonds to cool, then place in a blender with the remaining ingredients and blitz until you have a consistency similar to a runny pesto. Add a little water if it is too thick.
Step 3
Taste and season with some salt and pepper if desired.
Step 4

This recipe is so easy! You just need to toast the almonds in a pan until they’re golden brown and that’s all the cooking sorted! When you blend all the ingredients together, you’re looking for a consistency that’s like a runny pesto.
How long can you keep Cheat’s Romesco in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours. It can be kept in the fridge for 2 days.
Can I freeze Cheat’s Romesco?
This recipe freezes really well! Just remember to do the following:
- Portion it into individual pots or bags before freezing
- Defrost overnight in the fridge
- Once defrosted, stir well and use as usual

Love the look of this sauce, Cheat’s Romesco…. however I have a severe nut allergy – suggestions for swapping out the almonds please? I can eat Pine Nuts safely as they are seeds – would it be a straight swap? would it work? Thank you !!
