One of our favourite recipes to serve as a side dish, these Air Fryer Rustic Potato Wedges are versatile and incredibly easy to make. Raid your store cupboard for some paprika, mixed herbs and sea salt, and you’re well on your way to a plateful of tasty spuds.
A floury potato like Maris Piper or King Edwards works best for this recipe, but just like the herbs and spices, you can use what you have in, if it’s easier.
You can have these delicious wedges ready in just half an hour, although if you can spare the time, we highly recommend leaving the potato to soak in cold water before cooking. They’ll still taste great if you skip this step, but the process helps to draw out the starch, making it the key to the crispiest ever potato wedges.
Serve them with burgers, salad, chilli con carne…they go with everything!
If you don’t have an air fryer, you can also make these in the oven. Follow the oven method here.

This Air Fryer Rustic Potato Wedges is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.
NHS guidelines suggest men should aim for 2,500 calories per day to maintain a healthy body weight, and women require around 2000 calories. Each person has different calorie requirements depending on their goal, so you may want to adjust your daily calorie intake according to your own personal goal.
Step 1
Leaving the skin on, cut the potatoes into thick, chunky wedges. Place in a bowl and cover with cold water. Add a pinch of salt and leave for 30 minutes to draw out the starch.
Step 2
Preheat the air fryer to 200°C.
Step 3
Drain the wedges and dry thoroughly with kitchen paper.
Step 4
Place in a bowl and spray liberally with low-calorie cooking spray. Add the paprika, mixed herbs and sea salt and toss around to coat the wedges.
Step 5
Scatter evenly into the air fryer basket, and set to cook for 25 minutes.
Step 6
Halfway through the cooking time, open the air fryer and flip the wedges around with a fish slice or tongs, to ensure even cooking. Continue cooking until crisp and brown on the outside and soft and fluffy on the inside.
Step 7
Serve!

Just about anything! We love them as a side for burger night, and they also work really well alongside your favourite Mexican-style fakeaway dishes.

You should cook these Air Fryer Rustic Potato Wedges until they’re crispy and golden on the outside, and nice and fluffy in the middle. This should take around 25 minutes.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

We’d recommend that you eat this recipe within 4 hours of serving it. These wedges will be crispiest and taste best when they are freshly made.

We wouldn’t recommend freezing the wedges after cooking, as they could become a little soggy. They’re quick to make from scratch, although you could also cut and season the wedges, and then freeze them before cooking.

I’m sorry but 800g of potato’s divided by 4 (kcals) is 251kcals so just wondering are your kcal counting correct?

Hi Lisa, thanks for your message. We understand that it can be frustrating that apps and websites might not match up on calorie counts. However, all of our recipes have been double checked for accuracy. There are alot of reasons that the calories can differ; calories can be different after an ingredient is cooked in a particular way, or different brands of ingredients can vary the calorie count substantially, for example. Unfortunately, the apps available to the general public do not account for this. Hope this helps.
