Put your air fryer to good use and rustle up these gorgeous, golden roasties the next time you’re making dinner. Coated in pesto and lemon juice, they bring big, bold flavours to the table to switch up your Sunday roast or complement other Italian-inspired dishes. 

You’ll be pleased to hear that they’re great when you’re counting calories or following a diet plan like Weight Watchers. 

For this recipe we’d recommend using a floury potato such as King Edwards or Maris Piper – these are the best ones when you want them to be nice and fluffy on the inside, but golden and crispy on the outside. 

We’ve chosen to toss our potatoes in a dairy-free, vegan pesto, although you can use a non-vegan version if you prefer (just make sure you work out the additional calories, if you’re counting).

You’ll need an air fryer with a decent sized basket to give your spuds room to crisp up. 

How many calories are in these Air Fryer Pesto Roast Potatoes?

Preheat the air fryer to 190°C. Peel the potatoes and dice into pieces around 5cm in length. Place in a pan filled with cold water and add plenty of salt.

Drain in a colander and leave them for 5 minutes. After 5 minutes give them a shake to fluff up the edges. Add back into the pan and add 6 tsp of pesto. Toss to coat.

Add the potatoes to the air fryer basket and spray with low-calorie cooking spray. Cook for 20 minutes, making sure to turn halfway.

In a small bowl combine the lemon juice with the remaining 1 tsp pesto. Once the roast potatoes are cooked, drizzle over the lemon juice and pesto and toss to coat.

  • 7 tsp dairy-free pesto
  • 2 tsp lemon juice
  • salt
