Sweeten up breakfast time with this irresistible Berry Toastie recipe. You might normally only rustle up toasties with savoury, melty cheese middles, but we just know you’ll be obsessed with this fruity filling!

To prepare the creamy centre, we’ve mixed some sweetener into low-fat cream cheese. This is the perfect base to load up with all those juicy berries. Forget spending a fortune buying different kinds of fresh fruit – grab a frozen bag of mixed berries and leave a portion to defrost in the fridge overnight. All the flavour, fuss-free!

We’re using slices of light Danish bread to keep the calories nice and low. Once your sandwich is toasted to a golden brown crispiness, it’s time to dish it up with a drizzle of maple syrup and a little bit of icing sugar. All you need now is your morning cuppa!

We’ve made our toastie in a pan, but you can use a toasted sandwich maker if you have one.

It can be made gluten free as long as you swap the bread for a suitable gluten-free version. To make the recipe dairy free, you could swap the cream cheese to a plant-based version.

Arrange the fruit on one slice of bread and place the other piece of bread on top, with the cream cheese side facing inwards.

Step 4

Spray a frying pan with low-calorie cooking spray and set on a low heat. When the pan is hot, add the toastie and cook for 1-2 minutes. Flip and cook for a further 1-2 minutes. The bread should be golden brown and crispy.

Remove the toastie from the pan and cut in half. Dust with icing sugar and drizzle over the maple syrup. Serve.

Instructions
